Turning Leftovers into Dinner

Leftovers - we all have them at least from time to time. What do you do with them? Do you have them for lunch, or do they just sit in the fridge for a few days and then you end up throwing them out? You can start saving some time and money by learning how to use those leftovers in new ways to surprise your family at dinner time.

Some people like leftovers and some do not. Still then, many will eat them one day out, but quickly get tired of eating the same thing over and over. Here’s a way to fix the problem if you or someone in your family is the same way. Let’s start with an example. You prepare a roasted pork loin and rice for dinner one night. The family wants something else for dinner the following night so the pork loin gets pushed to the back of the refrigerator. Normally, that’s where it will stay until you clean out the fridge, right? Not anymore. Let’s do something to keep that pork loin from going to waste.

Eating leftovers the way they were originally served, is probably what’s turning family members off from wanting it again the next night. Your family doesn’t have to eat the pork loin as is. So, chop that pork loin up into bite size pieces.

Now you’re probably thinking, ok that’s great, but what do I do with it now? In a large skillet or wok, stir fry the leftover rice with a bag of frozen veggies, an egg, and some of the chopped pork loin to make pork fried rice. Add a little soy sauce and you’ve got a whole new dinner for your hungry family.

This is just one way that leftovers can be turned into a new dish with a new flavor. The same can also be done using chicken, seafood, or beef. Let’s take a look at beef.

If you have hamburgers left from dinner, chop them up until they resemble ground beef again. The meat can be combined with chili powder and taco sauce to make beef tacos. Or, add some beans, chopped peppers and tomatoes, and sauce to create a pot of chili. If you have the imagination, there are an unlimited number of possibilities of what you can do with meats and side dishes from a previous night’s dinner.

Using a little leftover magic can make one meal last for two, three, or even four more days. But, you don’t have to eat it all in the same week. Fix a new meal with the leftovers and freeze it until you are ready to have that particular meat again. On that day, dinner will already be made, all you’ll need to do is heat it up. Yes, it really can be just that simple.

Your family will be amazed at your ability to transform any meal into a new creation they will enjoy. Besides that, you will save money on your grocery bill and won’t be throwing it away in the trash can as spoiled leftovers. Try these and similar ideas to expand your family’s palate.

Ribs are amenable to all kinds of seasoning. Here are a few of the more popular styles:
Texas Style: Rub with lots of black pepper and finish with jalapeno flavor sauce.
Memphis Style: Rub containing garlic and onion powder, white pepper, seasoned pepper, chili powder, cumin, brown sugar and paprika. (Could be hot with all the peppers.) Mop with apple cider.
Southern Comfort Style: Rub contains, paprika, garlic powder, seasoned salt, dry mustard, oregano and chili powder. Finishing sauce, mild with molasses and bourbon.
Pacific Rim Style: Rub contains, 5-spice powder, black pepper. Baste contains, hoisin sauce, honey, sherry, soy sauce, gingerroot and garlic.
Chili Adobo: A favorite in New Mexico/Arizona. A good chili seasoning mix is mixed with a little vinegar and oil to make a paste that covers the ribs during the cooking process. Smells wonderful while cooking.

How to Grill a Whole Chicken
1. Remove the giblets from the cavity and rinse the chicken under cold water. Pat it dry with paper towels and season inside and out with salt, pepper and 2 tablespoons minced fresh basil, cilantro, rosemary, sage, tarragon or thyme.
2.Prepare a bed of hot coals in a charcoal grill. Rake the coals to one side; you'll grill your chicken next to the coals, but not over them. Alternatively, turn only one of your gas grill burners on high heat, leaving half of the grill unlit.
3. Brush the hot grill grate clean with a stiff wire brush. Using tongs to hold a small, clean (but expendable) towel, thinly coat the grill rack with oil.
4. Put the chicken breast-side-down on the unheated side of the grill. Cook, covered, for about 30 minutes, then turn it breast-side-up and continue grilling until the skin in golden brown and the meat is cooked through, about 30 more minutes.
5. Check for doneness by cutting into the middle of a piece of chicken. The juices should run clear when you cut into the thickest part of the piece.
6.Let the chicken sit about 15 minutes before carving.

Quick Tips From Debbie

Frugal Fabric Softeners
Using 1/4 cup vinegar in your laundry’s rinse cycle keeps clothes soft. You can set aside a vinegar jug just for laundry and add about 2 dozen drops of your favorite essential oil to the vinegar if you’d like (or as much EO as you feel necessary).
In a pail mix 1 gallon of water and 1 cup concentrated liquid fabric softener. Dip a sponge or washcloth in the liquid, squeeze out excess and toss in the dryer with your laundry. Seal pail when not in use.
Pour liquid fabric softener and hot water in a spray bottle (50/50 mix) and lightly mist wet laundry before starting the dryer. Two or three good shots should do it. You could also just spritz a clean washcloth and toss that in the dryer.
Cut dryer sheets in thirds or halves, use one strip per dryer load.
Mix equal parts hair conditioner and water and store in spray bottle. Mist a washcloth or sponge and toss in dryer with wet load.
Use about 1/4 to 1/2 of the liquid fabric softener that they recommend on the bottle.
1/8 cup baking soda added to laundry and 1/4 cup vinegar in the rinse cycle.
Use a Downy ball if you have one–just use vinegar instead.
Soak a washcloth in full strength liquid fabric softener. Wring out excess, then lay out to dry first before using–helps prevent staining laundry the first time. To use: toss the dried washcloth in the dryer and use again and again until it no longer works. Resoak when needed (you should be able to do a few dozen dryer loads per fabric softener soak).

Homemade Fabric Softener Recipe
1 part Vinegar
1 part Baking Soda
2 parts Hot Water
Place a pail large enough to hold double the amount of ingredients in the kitchen sink or bathtub. Mix the baking soda and water in the pail, stir till the powder is dissolved. Then add the vinegar.
Remember that baking soda and vinegar reacts with fizzing, so use a big pail to account for this. Once it’s stopped fizzing, pour into clean bottles, cap, then use 1/4 cup per rinse cycle.
Updated Info: The baking soda won’t be completely dissolved, just shake the bottle to mix the batch up before adding to the rinse cycle.

Date Nite with Chet

Restaurant review
by Chet Groskreutz

I read about this Caffe Gazelle in Huntington Beach and decided that we’d give it a try…and we were pleasantly surprised. You’d never expect to find gourmet cuisine in a strip mall atmosphere but… When we got there, I was a little concerned because it was so small and the décor somewhat understated…a few pictures on the walls and yet there was a man playing softly on a black keyboard (didn’t stop once while we were eating our dinner)! I choose the small round table near the keyboard player.

The thing that I noticed right away was that the place was full…a good sign.
Once you sit down, you get a torpedo of hot white bread, seemingly just out of the oven…crusty on the outside and gossamer on the inside…really good. For our starter, we order a baked artichoke –scallop dish that had a white sauce that was to die for….a great beginning. The sauces the chef uses in all his dishes are what really makes the food stand out at the Gazelle. We split a pear salad that had walnuts and fresh greens that was a perfect set-up for our main courses. Don’t know what the dressing was…but it tasted like a light olive oil with a hint of vinegar…simple and worked well with the pears and greens.

My main course…a simple veal dish with mushrooms, and a white cream Sauce that is hard to beat…a wonderful marriage of sweet spices that blended well together and tasted fantastic. Vickie had a filet mignon tornedos style which was fork tender and perfectly cooked, bathed in another white sauce that was awesome. Both dishes are presented simply with a light pasta spaghetti with a garnish of grilled broccoli. Vicki says to tell the girls they have a lot of chicken dishes too.

Dinner entrees are $10-$15, salads $6-$8…. Portions are nice…not too large but filling…probably why the prices are so fair. The service a bit slow…but the piano player is great and the food well worth the wait. On a scale of 1-10, 10 being best….this well priced find scores a strong 9…wish we’d found this place years ago! Enjoy!

Grilled Artichokes: The Houston's or Newport Rib Way (Lani’s Fav!)
INGREDIENTS
2 large artichokes
1 lemon, quartered
3/4 cup olive oil
4 cloves garlic, chopped
1 teaspoon salt
1/2 teaspoon ground black pepper
Fill a large bowl with cold water. Squeeze the juice from one lemon wedge into the water. Trim the tops from the artichokes, then cut in half lengthwise, and place halves into the bowl of lemon water to prevent them from turning brown. Bring a large pot of water to a boil. Meanwhile, preheat an outdoor grill for medium-high heat. Add artichokes to boiling water, and cook for about 15 minutes. Drain. Squeeze the remaining lemon wedges into a medium bowl. Stir in the olive oil and garlic, and season with salt and pepper. Grill for a few mins on each side to add smoked flavor. Chill artichokes for 1 hour.

Strawberry Shortcake Recipe
3 baskets of fresh strawberries
1/2 cup sugar
Whipping cream
Vanilla
Remove the stems from the strawberries. Slice into thin (1/4" to 1/8") slices. Put into a large bowl. Add 1/4 cup to 1/2 cup of sugar (depending on how sweet the strawberries are to begin with) and mix into the strawberries. Set aside at room temperature to macerate (which means that the sugar will soften the strawberries and help release their juices).
After the strawberries have been sitting for 20 minutes or so, take a potato masher and mash them a little. Not too much, just enough to get more juice out of them.
Whip the cream, adding a drop or two of vanilla and a teaspoon of sugar.
To serve, break up one biscuit per person into big pieces into a bowl. Ladle strawberries over the biscuit. Add a dollop of whipped cream.

1 giant pork roast
Generous amount of Garlic Salt
Pepper
Vegetable oil
Sprinkle generous amounts of garlic salt all over roast and brown on all sides in a very hot skillet with a little oil. Pepper all sides as well.
Place in crock pot on low for 8 hours. When cool enough, shred with 2 forks or your hands and remove some of the fat not all.
Heat 2 tablespoons of oil in a large skillet until extremely hot. Places shredded pork in skillet and let it get super crunchy on one side, taste and see if this needs anymore salt. You only want some of the meat crunchy. You can flip it over for a few more minutes. That's it-you get some great Carnitas meat for tacos.
