Turkey and Black Bean Chili
Ingredients (serves 3-4)
1 lb. ground turkey15 oz. can of black beans - OK to substitute pinto or red beans. Drain out liquid.
15 oz. can of chopped, diced or crushed tomato
1 whole onion - chopped.
1 whole bell pepper - chopped -- OK to use red, yellow or green bell pepper.
1 tbsp. chopped garlic - fresh or from the jar.
1 tsp. of chili power Salt and pepper to taste.
Directions
Saute chopped onion, bell pepper and garlic for 5 minutes, or until soft. Add turkey, chili powder, ground cumin and cook until done, 5-10 minutes. Pour in can of chopped tomato and drained black beans. Bring to a simmer, reduce heat to low, and cook covered for 20-30 minutes. Serve with a little chopped onion and shredded cheese on top & low-fat sour cream.

Parmesan Roasted Asparagus
Ingredients
2 1/2 pounds fresh asparagus (about 30 large)
2 tablespoons good olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan
2 lemons cut in wedges, for serving
Preheat the oven to 400 degrees F.
If the stalks of the asparagus are thick, peel the bottom 1/2 of each. Lay them in a single layer on a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper. Roast for 15 to 20 minutes, until tender. Sprinkle with the Parmesan and return to the oven for another minute. Serve with lemon wedges.

Cook 1 package Italian sausage (removed from casings and broken up) in olive oil until browned (if you are not Sherry Kettley you may want to add some chopped garlic). Add 4 cups chicken broth, 1 bag frozen spinach and about 1 to 2 cups of uncooked pasta or tortellini (if you use 2 cups pasta you may need to add more chicken broth or water); simmer 15 minutes, until pasta is tender. Add 1 can white beans, parmesan cheese and taste for salt. Serve with salad and crusty French bread.

Sweet and Spicy Glazed Cornish Game Hens
Ingredients
1/4 cup frozen pineapple juice concentrate, thawed
1 tablespoon jerk or Cajun seasoning blend
2 tablespoons canola oil
2 Cornish game hens, halved
Fresh cilantro sprigs, for garnish
Directions
In a small bowl, combine juice, jerk seasoning and oil. Rinse halved hens and pat dry with paper towels. Put the hens in a zip-top bag and pour in the marinade. Turn hens in the bag to coat evenly. Close the bag and refrigerate for 2 to 4 hours.
Preheat the oven to 400 degrees F.
Remove the hens from the marinade and place in a roasting pan, breast-side up. Pour the remaining marinade over the hens. Roast for 40 to 45 minutes or until cooked through and golden brown.
Garnish with cilantro.

Okay if you are a die hard bargain shopper, have I got a site for you. www.SaleGrab.com lists the deepest discounted prices on sale merchandise on dozens of different websites.
The site organizes by steepest discounts first and some of these are so steep…. it’s stupid!
Some women’s Prada pants were $50 instead of $544. A men’s LS silk shirt by Nautica is $10 instead of $70. A stunner was a pair of Marc Jacobs Sunglasses. They say they list for $2500. No wonder no one bought them. Here they’re $120, a much more sane price.
The items at the deepest discounts had a very small size selection, often one of a kind. When you got into the 60% off range you got a bit of a better selection with more current merchandise. A Charles David Oxford pump retailed for $144 and it’s on sale at $44 in all sizes. But you have to remember these items are severely discounted for a reason.
Every item is sold off a different website, this is just a referral or affiliated website. The sites are pretty well known. Amazon, Macy’s and the like.
You can cruise the site by type of clothing and a few designer names. But the fun is starting at the deepest discounts and going from there.
Curl up with a cup of Hot Chocolate and spend a little time. You may come across the one item you’ve always wanted for a super cheap price.

With the holidays just around the corner and all of us trying to keep our information secure during online purchases, I thought I’d check into the outlets at a tried and true, major online store.
Amazon.com is a fairly priced website. The Amazon Outlet is an extension of the regular site with additional discounts of 10%-50% on a variety of items usually found on their site. This outlet section includes deals from the independent sellers that Amazon partners up with.
There is a ton of product here, from computers (both new and refurbished) to sundries, bedding, toys, electronics, books, apparel and so much more. If you shop Amazon, you’ll want to start your bargain search here.
A quick cruise around the site yielded deals in every section. I found a Phillips DVD recorder for $200 instead of $399. A Panasonic 5.8 Ghz cordless phone was well priced at $54. An Audiovox portable personal video recorder w/ 2.5 LCD was $74.99 instead of $219.
A bit of something for anyone (guys and girls) from plus size to infant. The bedding section had a good selection of higher end bedding. No poly junk here. The toy section was huge and you can browse by age appropriate toys. Books and music were overflowing with choices. This on line outlet is huge! Chicken Enchilada Chili
The Ingredients.
serves 6

1 1/2 pounds chicken (boneless & skinless, OR fish out the bones and skin after about 4 hours)
1 1/2 cups prepared enchilada sauce (read labels carefully if avoiding gluten)
2 chopped celery stalks
2 (14.5 oz) cans tomatoes with seasoning (your choice: I had garlic and olive oil on hand)
2 (15 oz) cans pinto or kidney beans, undrained (or 1 cup dried pinto beans, soaked overnight)
1 onion, diced (or 1 tablespoon dried, minced onion flakes)
1-2 teaspoons chili powder
1 teaspoon cumin

The Directions.

Pour enchilada sauce and canned tomatoes into the bottom of a 6 quart slow cooker. Add beans, celery, onion and spices. Stir to combine. Place chicken on top. Cover and cook on low for 7-8 hours, or until flavors have combined. If you are using dried beans, you may need to cook longer to fully soften the beans. Since I was using the chicken quarters I got on sale, I fished out the chicken after about 4 hours, and removed the bones. I then stirred the chicken back into the pot. Serve with shredded cheddar cheese and a dollop of sour cream, if desired.

Creamy” Potato Leek Soup – Makes about 8 cups

Potatoes are also great for providing a creamy texture to soups without adding dairy. If you are vegetarian, omit bacon and use olive oil for sautéing onions.

4 slices bacon
4 small to medium leeks, cleaned and sliced thin
1 large shallot. minced
2 organic Russet potatoes, peeled and cut into 2″ pieces
3-4 cups chicken or veggie stock
1/2 cup white wine
Sea salt and black pepper
1/4 cup chopped chives

Directions
Cook bacon in medium skillet until crispy. Remove from pan and set aside on paper towel.
Add leeks and shallots to skillet and saute 5 minutes, or until tender and slight brown.
Add potatoes, 3 cups stock and wine. Cook for 45 minutes.
Cool slightly, and puree in batches in blender or food processor until creamy. Add extra stock if needed. Season with salt and pepper to taste.
Garnish with bacon bits and chives.

Traditional Southern Deviled Eggs
Ingredients
7 large eggs, hard boiled and peeled
1/4 cup mayonnaise
1 1/2 tablespoons sweet pickle relish
1 teaspoon prepared mustard
Salt and pepper, for taste
Paprika, for garnishing
Sweet gherkin pickles sliced, for garnishing
Pimentos, for garnishing
Directions
Halve 7 eggs lengthwise. Remove yolks and place in a small bowl.
Mash yolks with a fork and stir in mayonnaise, pickle relish, and

Shrimp Cocktail Sauce:

Frugal Freezer Meal Ideas

When it comes to freezer cooking, it is easy to prepare frugal meals. Many frugal recipes can be placed in your freezer for cooking at a later date. Here are a few ideas to get you started.

Chicken: Buy a large amount of chicken, divide it into freezer bags with the marinade of your choice, and freeze. The chicken will marinade as it thaws and you will have a tasty dish ready. Just add a side salad and some rice.

Beans and Rice: Healthy, full of fiber, and filling, beans and rice is yummy frugal meal. No need to make any other side dishes because beans and rice is truly a meal in itself.

Chili: Prepare a simple chili with cans of beans, onions, garlic, tomato paste and chili seasoning. You can add meat if you like but when it is made right, chili with no meat is very good. You can also add fresh tomatoes and other vegetables like bell peppers. Cook the chili, let it cool, and then just freeze.

Casseroles:
Some casseroles like tuna or broccoli and cheese don’t cost much make and can be frozen with ease. When you make a casserole for dinner one night, make two. Instead of cooking the second one, once it is prepared, put it in the freezer.

Frugal Breakfast Foods

Some favorite frugal breakfast items are homemade muffins and oatmeal. Pricewise almost nothing can beat either one of them, but if you are looking for a little more variety for that all-important first meal of the day, try some of these ideas instead. They are a much more economical option that hitting the drive-through of your favorite fast-food place but still give you some of that same taste (just better of course because it’s homemade.

1. Have a piece of casserole. It takes time to cook eggs and bacon for breakfast. No one wants to ruin their clothes with the mess it can create. On Sunday night, get breakfast done early. Put together a casserole using your favorite ingredients. Fewer eggs are needed in a casserole than when frying or scrambling them for breakfast each morning. Depending on the size of your family, the casserole may last two to three mornings.
2. Yogurt. Yogurt is a healthy and economical breakfast choice. When you are eating on the run, grab a container of yogurt and some dried or fresh fruit. Cutting up fruit on top of the yogurt adds carbohydrates to fuel you for the morning in addition to the calcium and protein in the yogurt itself.
3. Breakfast shake. This is even quicker and can be ingested while driving without taking your eyes off the road or both hands off the wheel. Put together some frozen fruit favorites, ice cubes, frozen yogurt, and unsweetened juice in a blender. Pour into Styrofoam cups to keep it cold. Everyone can grab a cup on the way out the door. The nutritional effect is about the same as yogurt, but without the spoon.
4. Pigs in a blanket. This is the homemade version. Whip up a batch of pancakes and freeze them in short stacks of three. A package or two of frozen link sausage is needed to create this quick and economical meal idea. Thaw out a stack of pancakes. Heat up three sausages in the microwave. Wrap a pancake around each sausage. Voila! You’ve got an instant pig in a blanket. Eat it as you watch the last of your favorite morning show. It can be eaten in the car without too much fuss or mess. For a sweeter taste and less mess, add a little maple syrup or honey to the batter when making the pancakes.
5. Breakfast sandwiches. In the evening, while you are getting things ready for the next day, grill up a few breakfast sandwiches. Choose whatever you like: turkey slices, ham slices, cheese, tomato, bacon, etc. When the sandwich cools, cut it into bite size pieces and put it in a container. In the morning, just grab a container; pop it into the microwave for fifteen or twenty seconds and breakfast is served.
These breakfast ideas are time saving and money-saving too. They make use of items you buy normally and also whatever you have around the house to create delicious fare for a morning rush. No more excuses for skipping breakfast or swinging into the fast food restaurant every morning.

3 cups dry oatmeal (rolled oats from food storage)
1/2 cup margarine (1 stick)
1/2 cup honey (you can also use brown sugar melted with the butter)
1/4 teaspoon salt
1/2 cup each nuts and dried fruit (optional)
First melt the margarine in a 3-quart saucepan over medium heat. Add the honey and salt. Heat the honey briefly with the margarine and then add the oatmeal.. Turn the mixture onto an ungreased cookie sheet, Spread the granola out evenly and bake it at 375° for 10 minutes. It should be a toasty brown. Now remove it from the oven and allow it to cool and crisp up right there in the pan. Store it in sealed canister. Add the nuts and dried fruit, if you are using them, when the granola is cool. Serve it with milk like regular cereal, or if you are hankering for a divinely inspired treat, get a big bowl of yogurt, and sprinkle a large handful of granola on top of it. Sliced bananas are good with this too.

The kids want it “to go”?

Peanut Butter Granola Bars
3 cups of homemade granola
3 tablespoons margarine
1/2 cup peanut butter
2 medium eggs
1 teaspoon vanilla
Optional: 1/2 cup raisins, or peanuts, or chocolate chips, or coconut, or sunflower seeds, or chopped apricots, or dates, or whatever strikes your fancy
You may use any recipe for granola that you like. If it already has peanuts and raisins added then you probably won’t want to add more, but you could if you wanted to. The end results wouldn’t be affected that much either way.
In a 2 quart sized saucepan melt the margarine and peanut butter together. Make sure the heat is low and stir it a lot to melt it evenly. Meanwhile crack both eggs into a cereal bowl and beat them up with a fork. When the margarine and peanut butter are completely melted together remove the pan from the heat. Whisk in the eggs. You have to do this quickly so the eggs won’t cook into scrambled eggs and peanut butter mess. The mixture will thicken and emulsify making a nice dough like texture. Beat in the vanilla. Stir in the prepared homemade granola. Add any optional ingredients to suit your taste. Turn the mixture into an oiled 8-inch square pan. Chill the bars in the fridge until hard. Cut into 16 squares. Serve with milk for a good snack, or pack in lunch boxes as a (relatively) healthy treat.

How to cook Grilled Whole Tilapia
Ingredients:
1 whole tilapia fish for each person
1 onion
1 sweet green pepper or bell pepper
1 lemon
1 tablespoon of vinegar
1 cup of vegetable oil
Chop the onion and sweet green pepper into fine pieces. Squeeze the juice from the lemon into a bowl. Add onion, sweet green pepper or bell pepper, vinegar, oil, red pepper flakes and/or cayenne pepper and salt to the bawl. Stir until the ingredients are well mixed. Cut three slits across the tilapia on both sides. Rub the mixture onto the tilapia and make sure a lot of mixture enters through the slits. If you have time, you can let the tilapia marinate in the bowl for 30-60 minutes. Grill the whole tilapia over a charcoal fire or broil it in the oven. Turn the tilapia over one or two times when you cook it to make it evenly grilled.

How to Condense Your Club Cards

1. It seems that every store nowadays wants you to be a "member" of their "buying club," and they promise all kinds of discounts and benefits if you'll carry and use one of their cards. But let's face it, no one's wallet is that big! Here's a way to shed the cards while still keeping the benefits.
2. Collect all of your club cards. Examine each for what allows the issuer to distinguish you from other customers with club cards they have issued. Usually this is a bar code, but sometimes it's just a number.
3. Photocopy the bar codes. Take the club cards with bar codes, and photocopy the bar codes. You should be able to lay many of the cards side by side on the photocopy machine, and photocopy most of them all at once.
4. Cut out the bar codes from the copy. Using scissors, carefully cut out each bar code. Include any alphanumeric information underneath the bar code.
5. Assemble your barcode card. On a clean sheet of white paper, lay out the cut out bar codes in a line. They should be laid out close enough together to fit as many as possible inside a space no larger than two club cards side-by-side. They should be far enough apart that a bar code scanner can easily scan one without hitting another. Leave enough space along one edge so there's room left to label each barcode.
6. Secure the bar codes to the paper. You'll need to secure them to the paper so they don't move around. You can use removable tape for this, or a glue stick. They don't need to be securely fastened, just well enough to be able to pick up the paper and flip it over without having them fall off.
7. Label the barcodes. With a black pen, label each barcode with the name of the store or entity that issued the club card for that barcode.
8. Photocopy the assembled barcodes. Take the sheet of paper with the barcodes assembled on it, and photocopy it.
9. Cut out the card. Cut out the side-by-side card, and fold the copy in half to make your barcode card.
10. Laminate the card. If you don't have a laminating machine, you can get it done at a local office store or do it yourself: Take a piece of wide clear packing tape, larger than the card, and cover the folded card with it. Flip it over and cover it with a second piece of packing tape. Depending on the width of the packing tape, you may need to use several pieces to cover the whole thing.
11. Cut away the extra tape. Cut away excess tape, being sure to leave a little clear tape around the edge. Voila! Ready to be used at your favorite store!
Tips
Some smartphones, including the iPhone, have an app that will allow you to add your cards, allowing them to be displayed on your phone screen, freeing you from the burden of carrying the cards.
Most grocery stores allow you to pull up your customer information via a telephone number. You can travel without your club cards and simply tell the cashier your phone number to get your discounts.
When you use this barcode card at a store, it's not necessary to cover up neighboring bar codes. The machine will not recognize them. But it is helpful to point out to the cashier which is the one for their store.
Do this for ALL of your club cards, not just the ones you use most often. The purpose is to have ALL of them accessible all the time, so you're able to take advantage of all available discounts, all the time.
This method obviously won't work for club cards that have a magnetic stripe. But look closely at these cards -- they usually also have a unique membership number on them as well. This number can be handwritten on your new handmade barcode card; however, if the number is more than 6 or 8 digits, you will annoy clerks who could have swiped a card faster and more accurately than hand-entering a long number, and you'll also slow down the line behind you.
Instead of photocopying the bar codes and physically cutting and pasting them on paper, you can scan them, and mock up your barcode card on the computer.
If you do not have your barcode card, ask the clerk to use the store's card. Most stores keep a discount card for general use, although it may be that all the clerks have to share one, or that it's kept by the manager.
Before you laminate, make a backup copy of the paper or scan it as a digital image and store it somewhere. This will come in handy if you need to add additional bar codes in the future.

The bags were a huge hit and the cost was very little, Most of their inventory is drapery and upholstery quality, but they also have a section of quilt type calico prints.
They carry a lot of discounted trims, pillow forms, batting and pre-made drapes.

Pozole
Pork and Hominy Stew 4 to 6 servings
Pork -- 1 1/2 to 2 pounds
Canned or fresh hominy, rinsed -- 2 to 3 cups
Garlic -- 3 to 5 cloves
Salt -- 2 teaspoons
Water or stock -- 6 cups
Add the pork, hominy, garlic, salt and stock or water to a large pot. Bring to a boil over medium-high heat, and then reduce heat to low and simmer for 1 1/2 to 2 hours, or until the meat is very tender.
Remove the pot from heat. Take the pork from pot and set aside to cool. When cool enough to handle, remove the meat from its bones and shred it with your hands.
Add the meat back to the pot and simmer for another 10 to 15 minutes. Adjust seasoning and serve with little bowls of your choice of garnishes like, avocado, onion, cheese, etc.,

How to Find the Best Bargains at Warehouse Clubs

More than 100 million people now shop at Sam's Club and Costco, in hopes of finding the lowest prices on items from tires to tiaras, cameras to crackers.
Here are a few tips to help you brave the masses and navigate the aisles in search of the best bargains.

Tip One: Look for Special Price Coding
Warehouse stores have special price codes for clearance items.
"If it ends in .97 at Costco it's on clearance and it's not going to be restocked," savings expert Julia Scott of bargainbabe.com said.
Price tags that end with a penny at Sam's Club means the item is on clearance.
"So what that means is if you want it, you better get it now," Scott said. Plus it's a good way to scan all the clothing piles and quickly distinguish the best deals.

Tip Two: Electronics
Large electronic stores can charge customers up to 15 percent to restock a returned item. But most membership stores have a 90 day return policy with no fee. BJ's has a shorter window returns, for example computers must be returned within 14 days.
Another incentive for customers to purchase electronic items, Costco and Sam's Club offer free phone-based tech support.
A manager at Sam's Club clued us in to the fact that you don't even have to buy your gadgets at Sam's and they'll still try to help you. You can call 24 hours a day, speak in English or Spanish, and they'll help you navigate your tech trouble.

Tip Three: Luxury Items and Prescriptions
Look for luxury items at warehouse stores, such as Kate Spade glasses that cost $42. We searched for the exact sunglasses style online and found them for over $100. We also found a pair of Kate Spade glasses at an upscale department store that had a different style name but looked very similar and cost $160.
Scott says prescription medications are cheaper too. At Sam's Club there are hundreds of prescriptions that cost $4 a month to fill. At Costco customers do not need a membership to use their pharmacy.

Tip Four: Memberships and Upgrades

While executive memberships promise rebates, the fine print says only certain purchases apply and you must purchase a minimum amount to earn enough rebates to recoup the cost of the upgraded membership.
If you want to avoid paying the $40 or $50 annual fee, pay a friend to buy you a warehouse club gift card. Then you can shop to the card limit without paying any surcharges.

Tip Five: Old Reliable Items
There are certain items that customers will almost always find at the lowest price at warehouse clubs.
Gas is generally five to 10 cents a gallon cheaper than at a local station.
Diapers and meat products are also less expensive. In fact the rotisserie chicken at Costco is so popular it has its own Facebook site.
One word of warning, avoid the middle of the store and the ends of the aisles where they usually put the tempting items you do not need. Instead stick to your list.
