Seared Sea Scallops YUM!!
1 pound sea scallops, 1 Tablespoon oil or butter , salt and pepper
Dry the scallops with paper towels. Salt and pepper both sides. Heat a large regular (not non-stick) pan for 2-3 minutes so it is quite hot. Add the oil or butter, and then the scallops. Cook the scallops about 1½- 2 minutes each side. They should have a golden crust on both ends, and the center should still look translucent. Turn with tongs. Serve immediately. One pound of scallops makes about 3 servings. Serving Suggestions: Serve with greens sautéed in garlic with a squeeze of lemon or as part of an elegant salad.

Easy Fried Eggplant- try something new!
2 tablespoons canola oil
1 large eggplant, peeled and sliced
3 eggs, beaten
2 cups dry bread crumbs
Directions
Heat oil in a large skillet over medium-high heat. Dip eggplant slices in egg, then in crumbs, and place in hot oil. Fry 2 to 3 minutes on each side, or until golden brown. I like to sprinkle with parmesan cheese when it comes out of the oil. Drain on paper towels.

Carnitas Recipe
1 pack taco seasoning
1 (4 pound) boneless pork shoulder roast
2 cups chicken broth
Directions
Coat pork with the spice mixture.Place pork in slow cooker. Pour the chicken broth around the sides of the pork, being careful not to rinse off the spice mixture. Cover and cook on Low until the pork shreds easily with a fork, about 10 hours. Turn the meat after it has cooked for 5 hours. Use cooking liquid as needed to moisten the meat. BAKED STUFFED SALMON
1 lg. salmon, 2-3 lb.
1 tbsp. butter
Salt and pepper
1 - 1 1/2 c. bread crumbs
1 clove garlic, minced
1 orange
1 lemon
1 c. milk
6 strips bacon
Clean salmon; cut off tail and fins. Wash clean and dry with paper towels. Rub butter inside cavity and on outside of salmon.
Mix salt, pepper, bread crumbs, garlic and the juice of the orange and the lemon; add milk. Stuff fish and lay in baking pan; put strips of bacon on top of fish. Bake 30-40 minutes in a preheated 350 degree oven.
