Thanksgiving Leftovers

Thanksgiving Shepherd’s Pie
In 9×13 glass baking dish, layer stuffing, then shredded turkey and top with leftover mashed potatoes. Dig a few 1/4 inch holes in the potatoes and pour gravy over the potatoes, and into the holes. Bake at 350 for 20-30 minutes, to warm it through. Cut and serve like a shepherd’s pie or lasagna.

Turkey Pot Pie
1 16 oz. bag of mixed vegetables, 2-3 cups of white sauce (White Sauce recipe: 2 T butter, 2 T flour, 1-2 cups milk In saucepan, melt butter. Once melted, add flour and whisk with butter. Add milk to butter/flour mix. Cook on medium-high heat for 5-6 minutes. Stir often. Sauce will thicken. If sauce is too thin, whisk in more flour. If sauce is too thick, whisk in more milk.)
1-2 cups shredded turkey, 1 pie crust. In 8×8 baking dish, mix vegetables (don’t have to be thawed) and 2-3 cups white sauce. Add 1-2 cups shredded turkey and mix through. Place pie crust over top of the baking dish. Vent pie crust with 2-3 small slits in the crust. Bake at 350 for 25 minutes.

BBQ Turkey Sandwiches with Corn Pudding
Add your favorite BBQ sauce to a whole wheat bun with sliced turkey. Serve with “cornbread stuffing” pudding.

Cornbread Stuffing Pudding
1 cup frozen corn, thawed
2 cups leftover cornbread stuffing
3/4 – 1 cup milk
1 large egg
In bowl, whish egg and milk. Add leftover cornbread stuffing and whisk. Add corn. Bake in a greased 8×8 baking dish for 25 minutes at 375.

Potato-Broccoli Soup
Take 2 leftover broccoli heads, add 1 cup of mashed potatoes, 2 cups of chicken broth, 2 cups of milk (0r 1 can evaporated milk), salt and pepper, and a little extra virgin olive oil. Toss in any leftover chopped celery and onion. Add all ingredients to saucepan. Stir well, bring to boil. Then reduce heat and simmer. Simmer for 10-15 minutes. If necessary, blend with immersion hand blender. Garnish with sour cream or shredded cheese.

Sweet Potato Muffins
A perfect Saturday morning treat!
1 cup mashed sweet potatoes
2 eggs
2/3 cup milk
1/4 cup honey or 1/2 cup sugar
2 T butter, melted
2 cups flour (or 2 cups rice flour if GF)
2 t baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
12 pecan halves, whole
OR 12 pecan halves, crushed (Place whole pecan on top of muffin, or put crushed pecans into muffin batter) Whisk sweet potatoes, eggs, milk, honey OR sugar, and butter. Add flour, baking powder, salt and cinnamon. Mix until batter forms. Fold in chopped pecans. Pour into greased 12 muffin tin. Add pecan half on top of batter if you didn’t mix the pecans into the batter.
Bake for 20 minutes at 400.

Yammy “Fries”

With yams and sweet potatoes on sale everywhere try these; Ingredients (serves 1-2)
1 large yam or sweet potato
1 teaspoon of cumin (optional)
1 tablespoon of oil
Salt and pepper to taste
Directions
Preheat oven to 375 degrees. Peel yam and slice into 1/2 inch wide and an 2 inch long spears. Yam are sometimes difficult to slice, so don't worry if "fries" are uneven and broken. Spread out yam fries on a metal cookie sheet, ok if they touch, the heat will shrink them. Sprinkle with cumin, salt and pepper. Lastly drizzle with oil and cook for about 45 minutes. Turn once about half way through to brown fries on both sides. Sweet potatoes have more sugar so cooking time may be shorter; watch them carefully to prevent from burning black.

Ingredients:

Let's Talk Turkey

What Kind of Turkey Should I Buy?
There are basically two types of raw birds to choose from…a pre-basted bird (typical ingredients include vegetable oil, broth and spices) or an un-basted bird to which nothing has been added. Personal preference usually dictates this choice. USDA Grade A is the highest quality grade for poultry and the one commonly found in grocery stores.
Is a Tom Better than A Hen?
Age not gender, is the determining factor for tenderness. All turkeys in the market are young, usually 4 – 6 months old. A hen usually weighs less than 16 pounds and a tom is usually over 16 pounds.
When Should I Buy the Turkey?
While the quality and the taste of frozen and fresh turkey are similar, The keeping time is not! A frozen turkey can be bought weeks or a month prior to the holiday, while a fresh bird should be purchased a day or two prior to cooking. Whenever possible, thaw your frozen turkey in the refrigerator. Count on 5 lbs. thawing each day, so a 15 pound turkey will take three days. Remember to place the turkey in a pan so that any juices won’t drip on other foods. If you don’t have that kind of space or time, thaw your bird in a cold water bath. A 15 pound turkey could take at least 8 hours this way. Please do not thaw poultry by leaving it at room temperature in your sink. This could allow unwanted bacteria a nice holiday home.
To prepare your turkey for roasting, always remove the giblets and the neck from the cavities. There are TWO cavities! Wash your bird in cold running water thoroughly, inside and out, then dry with a clean lint free towel. (Then wash the towel) If you are going to stuff the bird, pack the cavities loosely, as the stuffing will expand during the cooking process.
How much should I Buy?
3/4 of a pound of raw turkey per person will usually do the trick, however I recommend 1+ pound per person to allow for leftovers.
Is it Done? Thermometer Readings: Insert your instant read thermometer between the body and leg into the meaty part of the thigh. Look for a reading of 160 – 165 degrees. When you remove the thermometer, the juices should run clear. If you must test the turkey in the breast, which I don’t recommend, look for 160 – 165 degrees on a whole bird. Remember that the breast will be done before the thighs, so watch for this critical period in the cooking time. Pound per Minute Method:
All ovens cook differently, so these times are approximate. On an unstuffed turkey, figure 15 – 17 minutes per pound at 325 degrees. On a stuffed bird, figure 20 – 23 minutes per pound.
12-16 pounds…about 4 hours unstuffed
16-20 pounds…about 5 hours unstuffed
20-24 pounds…about 6 hours unstuffed
Resting Period:
Allow at least one minute per pound before carving. That turkey is still cooking when it first comes out of the oven.
Should I cook the turkey Up-Side-Down?
Pros: Your turkey breast will be moister and more flavorful this way, as the juices from the back cook down into your bird. This is better than having all the juices from your turkey adding flavor and moisture to the back bone!
Cons: If presentation is critical, this may not be your best choice as the turkey breast will not brown properly unless you have it on a rack. Turning a turkey while roasting is not recommended! Cooked turkeys explode when they hit your kitchen floor! Trust me I know, I found bits of turkey for weeks!

Oven French Toast
Make ahead and freeze for a quick home-made toaster breakfast before school or work
5 eggs
1 1/4 cups milk
1 1/2 Tablespoons sugar
1/2 teaspoon salt
16 slices bread (OR slice four 8-inch French rolls on the diagonal) Fresh French Bread 1.49 ea and Kaiser or Hoagie Rolls 2.39 a bag
Heat oven to 500°. Grease several baking sheets. In shallow dish, mix eggs, milk, sugar, and salt. Dip bread pieces in egg mixture and arrange on prepared baking sheets. Bake until underside is golden, about five minutes. Turn slices; bake until golden brown, about 2-5 minutes more. Watch them carefully to prevent burning. Serve with pancake syrup. (My kids and grandkids loved dipping food, kids will love these cut into strips so they can dip in syrup)
If preparing for the freezer, cool completely on wire rack. Place in a single layer on baking sheet and place in the freezer until firm, about 2 hours. Wrap, label, and return to freezer. When ready to serve, place in a 375° oven on ungreased baking sheet. Heat until hot, 8 to 10 minutes. You can simply pop smaller quantities into the toaster or toaster oven.

Wal-Mart is cutting the prices on 100 toys again, this time by as much as 30%. This is the second time in as many months that the retailer has reduced toy prices after announcing in October that it would cut prices each week until Christmas. Target responded to Wal-Mart's last price cuts by slashing its toy prices by as much as 50%.

Roast Beef
3 to 3 1/2 lbs of Boneless Rump
Olive oil
Garlic powder or garlic salt
Salt and pepper
You will need a meat thermometer
1 Preheat the oven to 375°F.
2 Take a tablespoon or so of olive oil and spread all around the roast. Sprinkle around the roast with garlic, salt and pepper. Place the roast in a roasting pan. The roast is placed fat side up so that as the fat melts it will bathe the entire roast in its juices.
3 Brown the roast at 475°F for half an hour. Lower the heat to 300°F. The roast should take about ½ hour per pound additionally to cook. Pull the roast from the oven when the inside temperature of the roast is 135° to 140°F. Let the roast rest for at least 15 minutes

Chicken in a Blanket
Ingredients
1 (10 ounce) can Crescent Dough
1 (4 ounce) container Spreadable Cheese
4 small Chicken Breasts
2 tablespoons Garlic Salt
Cooking Directions
Brown the chicken breasts for a couple of minutes on each side by placing in medium/high heat skillet. Divide the crescent dough into 4 equal square pieces. Place one tablespoon of cheese in the center of each square. Place a chicken breast on the top of the cheese and fold the crescent dough around the chicken, make sure to close up all the sides. Sprinkle with garlic salt and toss in a 350 degree oven for 25 minutes. Serve with a dollop of cranberry sauce, orange marmalade or apricot jam.
Yield: 4 servings

Time to break out Mama’s Tuna Noodle casserole recipe! With tuna 3 for 2.00! If you don’t have one here is a quick and simple recipe from 1955 .
2 cans tuna
1 bag noodles (cooked)
2 cans of cream of mushroom soup
1 can of peas (optional)
