BEEF & BROCCOLI STIR-FRY
2 cups MINUTE® Brown Rice, uncooked
1 lb. beef flank steak, cut into strips
2 tsp. cornstarch, 1/4 cup orange juice, 1 tsp. ground ginger, 1 tbsp. vegetable oil. 1 pkg. (10 oz.) frozen broccoli florets, 1 can (8 oz.) sliced water chestnuts, drained, 1/4 cup reduced-sodium soy sauce, 1/4 cup dry-roasted peanuts
Place steak strips in medium bowl. Sprinkle with cornstarch; toss to coat. Add orange juice and ginger; stir until well blended. Heat oil in large nonstick skillet on medium-high heat. Add steak mixture; stir-fry 4 to 5 minutes or until steak is cooked through. Reduce heat to medium-low. Add broccoli, water chestnuts and soy sauce; mix well. Cover; simmer 5 minutes or until thickened, stirring frequently. Serve over rice; sprinkle with peanuts, if desired.

Fast and Friendly Meatballs
2 tablespoons olive oil
1 (20 ounce) package ground turkey
1 egg, beaten
1/3 cup Italian seasoned bread crumbs
Directions
Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish with the olive oil, and place it in the oven while preheating.
In a medium bowl, mix together the ground turkey, egg, and bread crumbs using your hands. Using an ice cream scoop if possible, form the meat into golf ball sized meatballs. Place about 1 inch apart in the hot baking dish. Press down to flatten the bottom just slightly.
Bake for 15 minutes in the preheated oven, then turn them over, and continue baking for about 5 more minutes, or until somewhat crispy on the outside. Serve with pasta and sauce or however you'd like.

2 tbsp. butter, divided
1 clove garlic
1 tbsp. teriyaki sauce
2 tbsp. lemon juice
1 tsp. honey
1 tbsp. sesame seeds
In skillet set at 250 degrees or medium heat, melt 1 tablespoon butter; add garlic and saute until tender. Remove from heat. Stir in teriyaki, lemon juice, honey and sesame seeds. Pour over fish and marinate 30 minutes. Heat 1 tablespoon butter in skillet. Set at medium heat. Add fish and saute 4-5 minutes on each side, basting with marinade. Garnish with parsley. Makes 4 servings.

Easy Grilled Tri Tip
1/4 cup soy sauce
1/4 cup olive oil
2 tablespoons water
2 cloves garlic, peeled and chopped
ground black pepper to taste
4 pounds beef tri tip, cut into 1/2 inch slices
In a large, non-reactive bowl, blend the soy sauce, olive oil, water, garlic, and pepper. Place the beef tri tip in the marinade. Cover, and marinate in the refrigerator at least 4 hours. Preheat an outdoor grill for high heat, and lightly oil grate. Grill the beef slices 3 to 5 minutes per side, or to desired doneness. Discard remaining marinade.

EASY DELICIOUS CHICKEN BAKE
4 potatoes
4 carrots
2 celery stalks
1 onion
6 chicken thighs
1 envelope Good Seasons Italian dressing mix
Wash and clean chicken thighs, arrange in 9x13 baking dish. Wash and dice up potatoes, carrots, celery and onion. Mix and arrange all around chicken thighs. Mix Good Season's Italian dressing with water, shake thoroughly, and pour over chicken and vegetables. Add more water so that vegetables are somewhat covered. Bake at 350 degrees for 1 hour or chicken looks golden brown. (And just because it has Easy and Bake in the name you have to use your regular oven;) Recipe can be altered for more people. Feeds approximately 3 people.

Southern Fried Cat Fish (This reminds me of Summers at Grandpaw’s House)
1/2 cup buttermilk
1/2 cup water
salt and pepper, to taste
1 pound catfish fillets, cut in strips
1 1/2 cups fine cornmeal
1/2 cup all-purpose flour
1 teaspoon seafood seasoning, such as Old Bay™
1 quart vegetable oil for deep frying
In a small bowl, mix buttermilk, water, salt, and pepper. Pour mixture into a flat pan large enough to hold the fillets. Spread fish in one layer over bottom of pan, turning to coat each side, and set aside to marinate.
In a 1 gallon resealable plastic bag, combine the cornmeal, flour, and seafood seasoning. Add fish to mixture, a few fillets at a time, and tumble gently to coat evenly. Deep fry fillets until golden brown, about 3 minutes. Avoid overcrowding so fillets have room to brown properly. Fish should be slightly crisp outside, and moist and flaky inside. Drain on paper towels.

1 fresh pineapple - peeled, cored and cut into rings
1/4 cup canned coconut milk
1/2 cup cinnamon sugar
Preheat a grill for medium heat. When the grill is hot, lightly oil the grate.
Place the coconut milk and cinnamon sugar into separate dishes. Dip slices of pineapple into coconut milk, then coat in cinnamon sugar. Grill slices for 6 minutes on each side.

STUFFED BELL PEPPERS

1 lb. lean ground beef
1 medium sweet onion
2 1/2 cups cooked Jasmine white rice
2 medium/large green bell peppers
2 15 oz. cans tomato sauce
8 heaping tablespoons honey
Prepare Jasmine white rice, fluff, cover and set aside.
Dice sweet onion, add to large non-stick saute/frying pan with lean ground beef. Sauté beef and onion until beef is browned. Drain fat, add 2 1/2 cups of Jasmine white rice to browned beef and diced sweet onion; mix. Cut bell peppers in half, remove caps and seeds; rinse. Pour 1 15 oz. can of tomato sauce into measuring cup and add 4 heaping tablespoons of honey and blend. Pour tomato sauce mixture over beef and rice; mix. Add second 15 oz. can of tomato sauce to measuring cup and add 4 heaping tablespoons honey; blend. Add beef and rice mixture to green bell pepper halves. Arrange in glass casserole dish. Pour tomato sauce mixture over and around stuffed bell peppers. Bake at 350°F for 1 hour. Serve with a crisp cool salad. Serves 4.


Easy Homemade Chili Recipe
2 1/2lbs ground beef
1 small onion (chopped)
3 cloves garlic (minced)
1 packet chili powder
1-46oz can tomato juice
2 cans pinto beans or kidney beans
Saute ground beef,onion and garlic until brown. Drain off any grease. Return to stove and add chili powder, tomato juice, beans and salt and pepper. Cook for 1 hour.

Mango Chicken

1 (1 pound) large mango, peeled, thinly sliced ON SALE
2/3 cup mayonnaise ON SALE
1 teaspoon mild curry powder
1 teaspoon fresh lemon juice
1 pinch salt and ground black pepper
3/4 cup toasted cashews
In a large pot, cook chicken in lightly salted boiling water for 20 minutes. Drain, cool, and cut into 1/2-inch strips. In a large bowl, stir together chicken strips, raisins, and half of the mango. In a medium bowl, mix together mayonnaise, curry powder, and lemon juice. Season with salt and pepper, Stir in half the nuts. Transfer to a platter, and garnish with remaining mango strips and cashews.

1 pkg. dried onion soup mix
1 c. water or chicken broth
8 oz. French dressing
8 oz. apricot jam
In a blender, combine all ingredients (except chicken). Remove skin from chicken and arrange in a shallow baking pan or casserole. Sprinkle lightly with garlic powder, salt, and pepper, if desired. Pour 1/2 of the blended mixture over chicken. Bake in a preheated 350°F for 45 minutes. Turn pieces and pour remaining mixture over chicken and bake for another 30 minutes or until chicken is tender and juices run clear

EZ Baked Bar-be-que Chicken
1 (2 to 3 pound) whole chicken, cut into pieces
2 teaspoons garlic powder
1 1/2 cups prepared barbecue sauce
Preheat oven to 350 degrees F (175 degrees C).
Place chicken in a shallow baking dish and sprinkle with garlic powder. Cover and bake 1 hour at 350 degrees F (175 degrees C).
Remove baking dish from oven and drain any fat from dish. Pour the barbecue sauce evenly over the chicken and bake uncovered for 30 minutes at 350 degrees F (175 degrees C). Remove and serve.

How to Cook Tasty Swai

Swai are an excellent source of omega 3 fatty acids, and they are naturally low in saturated fat and cholesterol. Much like the catfish in type, Swai are light, sweet, and flaky. Compared to the mild cod and sole.
Things You'll Need:

3 Swai fillets, thawed & rinsed off.
1/4 Cup Olive Oil
2 Tbls Margarine
1 Tbls Red Wine Vinegar
Salt to taste
2 Tbls Garlic powder
Lemon Pepper (seasoning)
Make sure your Swai fillets are rinsed off well. Pat off any excess water. In large skillet pan, heat up Olive Oil, then add Margarine. Heat over medium heat till Margarine is melted. Add Red Wine Vinegar, and give a light stir. Add a pinch of Salt, and then Garlic Powder. Add Swai fillets, and continue cooking over medium heat. Sprinkle Lemon Pepper directly onto each fillet. After about 3 minutes, carefully flip Swai fillets over, sprinkling the other side with Lemon Pepper, and cooking for about 4 minutes. Fish is done when outside is opaque.

Grilled Shrimp
2 pounds fresh shrimp, peeled and deveined
3 cloves garlic, minced, 1/3 cup olive oil, 1/4 cup tomato sauce, 2 tablespoons red wine vinegar, 2 tablespoons chopped fresh basil, 1/2 teaspoon salt, 1/4 teaspoon cayenne pepper
In a large bowl, stir together the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper. Add shrimp to the bowl, and stir until evenly coated. Cover, and refrigerate for 30 minutes to 1 hour, stirring once or twice. Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade. Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque

Bacon Wrapped Salmon
4 (4 ounce) skin-on salmon fillets
1 teaspoon garlic powder
1 teaspoon dried dill weed
salt and pepper to taste
1/2 pound bacon, cut in half
Preheat an oven to 375 degrees F (190 degrees C). Grease a baking sheet liberally with olive oil.
Place the salmon fillets onto the baking sheet skin-side-down. Sprinkle the fillets with garlic powder, dill, salt, and pepper. Lay the bacon strips over the fillets to cover completely. Do not overlap the bacon strips.
Bake in the preheated oven until the salmon is no longer translucent in the center, 20 to 25 minutes. Turn the oven on to broil and cook until the bacon has crisped, 1 to 2 minutes.

1 pound lean ground beef
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/2 teaspoon garlic powder

3/4 cup ketchup
3 teaspoons brown sugar
salt to taste
ground black pepper to taste
In a medium skillet over medium heat, brown the ground beef, onion, and green pepper; drain off liquids.
Stir in the garlic powder, mustard, ketchup, and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper. Serve on favorite roll or hamburger bun.

Baked Chicken Breasts
4 chicken breast halves, 2 eggs (no yolks), 1 tablespoon red cracked pepper, 1 tablespoon water, 1 tablespoon garlic powder, 3/4 cup flour
1/4 cup of crumbled tortilla chips or bread crumbs, 2 tablespoons of butter
Preheat oven to 400°F.
Cover a cookie sheet with non stick cooking spray.
Place egg whites and water in a medium sized bowl. Place 1/2 tablespoon red cracked pepper, 1/2 tablespoon garlic powder, and either 1/4 cup of crumbled tortilla chips or bread crumbs in a bowl. Place the rest of the spices and the flour in a ziploc bag.Shake each piece of chicken in the ziploc bag then dip in the bowl of egg mixture then sprinkle the bread crumb/tortilla mixture on each side of each piece of chicken. Place the chicken on the cookie sheet and put 1/2 tablespoon of butter on each piece of chicken.
Place the cookie sheet in the preheated oven and wait 9 minutes. Use tongs to turn the chicken over then wait another 9 minutes

Salmon Enchiladas From the .99 Chef


Ingredients (serves 2-3)
6 corn tortillas
15 oz. can of enchilada sauce - green, but you can substitute with easier-to-get red sauce.
7 1/2 ounce can of salmon - drained. The can size (or soft pack) of salmon you use will determine how many enchiladas you can make.
7 slices of cheese - about 7 ounces. You can use any favorite, including American cheese. I used white Monterrey Jack that was on sale.
1/4 onion chopped - optional.
1/4 bell pepper chopped - optional.
1 tsp. of chopped garlic fresh or from jar - optional.
Salt and pepper to taste.
1 tsp. oil for sautéing onion and bell pepper.

Directions
Sauté chopped bell pepper, onion and garlic until soft, about 5 minutes. Drains can of salmon and loosely break it up in a bowl. Slice cheese into strips, or shred cheese if it is in block form. Microwave loosely stacked tortillas for 30-45 seconds until soft and pliable. On a large plate pour enough enchilada sauce to almost cover.
Dredge tortilla in enchilada sauce on both sides. Place sauced tortilla into baking casserole dish and add enough cheese and salmon to cover middle of the tortilla. Add a teaspoon of sautéed veggies. Fold two sides of tortilla and place seam side down. Repeat this paragraph's steps for the other 5 tortillas.
Once all the tortillas are stuffed and assembled in baking dish, add the rest of the cheese, any leftover sautéed veggies over the top and pour on the extra enchilada sauce.Bake in a preheated oven at 375 degrees about 15-20 minutes until the cheese is melted and the sauce is bubbling. When done, allow to cool for a minute then serve.

Hummus From the .99 Chef

1 15 oz can of garbanzo beans (or chick peas) - drained
1 teaspoon chopped garlic - fresh or from jar.
1 teaspoon of lemon or lime juice - fresh or from bottle.
1 teaspoon sesame seeds - optional
1/4 cup of olive, sesame or vegetable oil - may need a little more, depending on your food processor (or blender).
