FRESH PINEAPPLE AND AVOCADO SALAD
1 ripe avocado
4 slices fresh pineapple
2 tbsp. olive or salad oil
2 tsp. fresh lime or lemon juice
1/4 tsp. salt
1/2 tsp. sugar
Lettuce or other salad greens
Chill the avocado and pineapple. Remove the peel and pit from the avocado. Cut into 1/2-inch cubes. Peel and cut the pineapple into wedges. Add them to the avocado. Combine the oil, lime or lemon juice, salt, and sugar. Add to fruit and toss lightly. Serve on lettuce or other salad greens. Makes 6 servings.

3/4 cup vinegar
3/4 cup ketchup
1 1/2 cups water
1/2 cup chopped onion
2 small cloves garlic, minced
2 teaspoons salt
1/2 teaspoon pepper
2 teaspoons Worcestershire sauce
few dashes hot pepper sauce or ground cayenne pepper
3 tablespoons brown sugar
8 thick pork loin chops (3 pounds)
Preparation:
In a saucepan mix first 10 ingredients. Bring mixture to a boil; reduce heat, cover, and simmer for 20 minutes, stirring occasionally. Pour sauce over pork chops in a large, deep bowl; cover and refrigerate for at least 4 hours. When ready to cook, arrange chops in a single layer in a large shallow baking dish or roasting pan. Pour sauce over chops. Bake, uncovered, at 350° for 1 to 1 1/2 hours, or until chops are tender, basting occasionally.
Pork chops recipe serves 6 to 8.

Ingredients
6 chicken thighs
2 (10.75 ounce) cans condensed cream of celery soup
salt and pepper to taste
1 (12 ounce) package refrigerated biscuit dough
Directions
In a large pot over high heat, combine the chicken with enough water to cover, and boil for 15 to 20 minutes. Drain some of the water from the pot, reserving 3 cups in the pot. Remove chicken and allow it to cool, then pull it apart into bite size pieces; return to pot.
Reduce heat to medium, and add the cans of condensed soup. Season with salt and pepper. Pull the biscuit dough into pieces, and add to the soup. Simmer over medium heat for 7 to 8 minutes, or until the dough is cooked through

1 tablespoon butter
4 skinless, boneless chicken breast halves (about 1 pound)
1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup (Regular or Healthy Request®)
1/4 cup water
1 tablespoon packed brown sugar
1 tablespoon vinegar
4 cups hot cooked regular long-grain white rice
Heat the butter in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides.
Stir the soup, water, brown sugar and vinegar in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until the chicken is cooked through. Serve the chicken and sauce with the rice.

I read about this Caffe Gazelle in Huntington Beach and decided that we’d give it a try…and we were pleasantly surprised. You’d never expect to find gourmet cuisine in a strip mall atmosphere but… When we got there, I was a little concerned because it was so small and the décor somewhat understated…a few pictures on the walls and yet there was a man playing softly on a black keyboard (didn’t stop once while we were eating our dinner)! I choose the small round table near the keyboard player.

The thing that I noticed right away was that the place was full…a good sign.
Once you sit down, you get a torpedo of hot white bread, seemingly just out of the oven…crusty on the outside and gossamer on the inside…really good. For our starter, we order a baked artichoke –scallop dish that had a white sauce that was to die for….a great beginning. The sauces the chef uses in all his dishes are what really makes the food stand out at the Gazelle. We split a pear salad that had walnuts and fresh greens that was a perfect set-up for our main courses. Don’t know what the dressing was…but it tasted like a light olive oil with a hint of vinegar…simple and worked well with the pears and greens.

My main course…a simple veal dish with mushrooms, and a white cream Sauce that is hard to beat…a wonderful marriage of sweet spices that blended well together and tasted fantastic. Vickie had a filet mignon tornedos style which was fork tender and perfectly cooked, bathed in another white sauce that was awesome. Both dishes are presented simply with a light pasta spaghetti with a garnish of grilled broccoli. Vicki says to tell the girls they have a lot of chicken dishes too.

Dinner entrees are $10-$15, salads $6-$8…. Portions are nice…not too large but filling…probably why the prices are so fair. The service a bit slow…but the piano player is great and the food well worth the wait. On a scale of 1-10, 10 being best….this well priced find scores a strong 9…wish we’d found this place years ago! Enjoy!

2 racks of beef back ribs (7 ribs per rack)
2 Tbsp. black pepper
1 Tbsp. ground oregano
1 Tbsp. paprika
2 tsp. celery salt

Combine all spices. Rub over surface of ribs to coat well.
Preheat oven to 300�F.
Place ribs on a rack in a roasting pan. Add 1/2-inch of water to bottom of pan. Cover pan with foil and tightly seal edges.
Bake at 300F for 2 hours.
Remove ribs from pan and place on grill over medium coals for 15
minutes. Serve with your favorite barbecue sauce.

OVEN - BAKED DRUMSTICKS
1/2 c. all-purpose flour
1 tsp. salt, optional
1/2 tsp. paprika
1/4 tsp. pepper
6 chicken drumsticks
1/4 c. butter, melted
Heat oven to 425 degrees. Mix flour, salt, paprika and pepper in a bowl. Dip drumsticks into butter; roll in flour mixture to coat. Arrange in an ungreased square pan 8 x 8 x 2 inches. Bake uncovered until done, about 50 minutes. Yield 6 drumsticks.

INGREDIENTS
2 large artichokes
1 lemon, quartered
3/4 cup olive oil
4 cloves garlic, chopped
1 teaspoon salt
1/2 teaspoon ground black pepper
Fill a large bowl with cold water. Squeeze the juice from one lemon wedge into the water. Trim the tops from the artichokes, then cut in half lengthwise, and place halves into the bowl of lemon water to prevent them from turning brown. Bring a large pot of water to a boil. Meanwhile, preheat an outdoor grill for medium-high heat. Add artichokes to boiling water, and cook for about 15 minutes. Drain. Squeeze the remaining lemon wedges into a medium bowl. Stir in the olive oil and garlic, and season with salt and pepper. Grill for a few mins on each side to add smoked flavor. Chill artichokes for 1 hour.

Strawberry Shortcake Recipe
3 baskets of fresh strawberries
1/2 cup sugar
Whipping cream
Vanilla
Remove the stems from the strawberries. Slice into thin (1/4" to 1/8") slices. Put into a large bowl. Add 1/4 cup to 1/2 cup of sugar (depending on how sweet the strawberries are to begin with) and mix into the strawberries. Set aside at room temperature to macerate (which means that the sugar will soften the strawberries and help release their juices).
After the strawberries have been sitting for 20 minutes or so, take a potato masher and mash them a little. Not too much, just enough to get more juice out of them.
Whip the cream, adding a drop or two of vanilla and a teaspoon of sugar.
To serve, break up one biscuit per person into big pieces into a bowl. Ladle strawberries over the biscuit. Add a dollop of whipped cream.

GRILLED LONDON BROIL
1 1/2 - 2 lb. London Broil steak
MARINADE:
1/2 c. soy sauce
1/4 c. vegetable oil
2 tbsp. molasses
2 tsp. ground ginger
2 tsp. dry mustard
6 cloves garlic, minced
1 med. onion, thinly sliced
Mix well all ingredients except onion. Add onion. Marinate meat at least 3 hours or overnight.
Heat grill. Grill 3 minutes on high on each side with lid closed. Reduce heat to low. Cook another 15 minutes with lid closed. Do not peek. Let steak rest 5 to 10 minutes, slice across grain in thin slices. Strain marinade and serve warm with sliced meat.

1 giant pork roast
Generous amount of Garlic Salt
Pepper
Vegetable oil
Sprinkle generous amounts of garlic salt all over roast and brown on all sides in a very hot skillet with a little oil. Pepper all sides as well.
Place in crock pot on low for 8 hours. When cool enough, shred with 2 forks or your hands and remove some of the fat not all.
Heat 2 tablespoons of oil in a large skillet until extremely hot. Places shredded pork in skillet and let it get super crunchy on one side, taste and see if this needs anymore salt. You only want some of the meat crunchy. You can flip it over for a few more minutes. That's it-you get some great Carnitas meat for tacos.

Stuffed Pork Loin
3 tablespoons olive oil
1 large onion, chopped
2 Granny Smith apples, peeled, cored and chopped
8 fresh sage leaves
2 cups thick-cut white bread cubes, crusts removed
1 egg, beaten
2 tablespoons butter
Salt and pepper
1/2 to 1 cup chicken broth, plus more if needed
1 (3 pound) pork loin roast, butterflied
Directions
Preheat oven to 375 degrees F.
In a large skillet, heat the olive oil over medium-high heat. Add the onion, apples and sage. Saute until softened. Remove from the heat and gently stir in the bread, egg, butter and salt and pepper. Add the chicken broth gradually until everything is moistened. Spoon the stuffing down the pork, horizontally, in a line. Roll the pork over the stuffing, jelly roll style, ending with the seam down and fat side upTightly tie the pork roast up with butcher's twine, season it with more salt and pepper, and transfer to a roasting pan. Roast the pork in a preheated oven for about 90 minutes or until an instant-read thermometer registers 160 degrees F. Remove from the oven and let rest for 15 minutes before slicing.

Baked Sweet Potatoes
4 medium sweet potatoes, even in size
vegetable oil
butter
salt and paprika or cinnamon sugar
Preparation:
Scrub sweet potatoes; brush each with vegetable oil. Arrange potatoes on oven rack and bake at 450° for 35 to 45 minutes, until tender. Remove at once and prick with a fork to let steam out. Cut a 1 1/2-inch cross in the center of each potato. Hold each potato with pot holder and press upwards until filling "bursts" up through the cuts.
Top with butter and sprinkle with salt and paprika or a mixture of cinnamon and sugar.
