GLAZED CORNISH HEN WITH ORANGE AND WILD RICE
2 Cornish hens
1 (6 oz.) pkg. long grain and wild rice mix
1 tsp. orange rind, grated
1 1/3 c. fresh orange juice
butter
1/3 c. honey
1 tbsp. brown sugar
1/3 tsp. salt
FOR STUFFING: Cook rice mix according to package directions, adding rind and 1 cup orange juice.
RINSE: Hens, pat dry; loosely stuff each body cavity with 1/2 cup stuffing; close with skewers or sew. Tie legs together with string; fold wing tips under backs. Rub with butter. Place breast side up; on rack in roasting pan. Roast at 325 degrees for 1 1/2 hours or until done. MEANWHILE: Combine honey, remaining 1/3 cup orange juice, 2 tablespoons butter, brown sugar and salt; boil hard for 1 minute. During last 25 minutes of roasting, baste every 10 minutes with glaze. Heat remaining stuffing to pass separately.

Simple Baked Swai
Swai is a mild white fish with a clean, slightly sweet flavor and stays moist during cooking
1 Tablespoon Butter
4 Swai Fillets, 6 ounces each
3 Tablespoons Olive Oil, divided
1 Cup Bread Crumbs, plain
Salt and Fresh Ground Pepper
1 Lemon
Preheat oven to 350°F.
Lightly butter 13"x9"x2" baking dish. Brush Swai fillets on both sides with olive oil. Season with salt and pepper. Dredge in breadcrumbs on both sides. Arrange fillets in prepared pan.
Drizzle 1 teaspoon olive oil over each. Bake until fillets are cooked through, about 12-15 minutes.
Turn oven to Broil. Broil fish until crust is golden, watching closely to avoid burning, about 2 minutes. Transfer to plates, squeeze lemon over top, and serve

Oven Roasted Asparagus
Asparagus
Olive oil (about a teaspoon for 6 spears)
Salt, pepper, and herbs of choice
A few drops of lemon juice (optional)
1) Preheat oven to 425 F.
2) Prepare the asparagus, either just by snapping off the ends, or trimming the very end and peeling tough part with vegetable peeler.
3) Put on cookie sheet or baking pan.
4) Drizzle the oil over the asparagus, followed by the salt, pepper, herbs, and lemon. Get in there with your hands and smear it all over.
5. Bake for 5-10 minutes, until tender.

Perfect roasted squash
Squash, chopped and seeded
Olive oil, enough to cover squash
Coarse salt, to taste
Freshly cracked pepper, to taste
Fresh thyme, to taste
This method ensures the squash stays just moist enough while it’s roasting. Keeping it covered the whole time would render it too mushy, and keeping it uncovered might dry it out.
Preheat oven to 425 degrees F. Cut up a medium butternut squash (or something equivalent). Toss it with a couple glugs of good olive oil, coarse salt, pepper, and some fresh thyme if you have it. Spread it out in a single layer on a parchment-lined baking sheet, cover the squash with foil, and bake for 12 minutes. Remove foil and roast for 12-15 minutes more until squash is tender
