Quick and Easy Grilled Potatoes
2 large russet potatoes, scrubbed
2 tablespoons olive oil
salt and ground black pepper to taste
Place the potatoes in a microwave oven, and cook on high power for about 5 minutes. Slice each potato in half the long way and cook potatoes another 2 minutes on high power. Preheat a grill for medium heat. Brush the potato tops with olive oil, and season with salt and pepper to taste. Cook on prepared grill for 15 to 20 minutes, turning once.

Easy Chicken Tamales
6 cups Masa
2 large rotisserie Chickens
2 (15 1/16 ounce) jars green tomatillo sauce
1 bag corn husk
Soak the corn husks in warm water until soft.
Shred the chicken and marinate in the green salsa or tomatillo sauce.
Spread masa evenly over corn husks, and spread a spoonful of marinated chicken on top of the masa.
Fold the sides of the corn husk to center over the masa so that they overlap to make a long package.
Fold the empty part of the husk under so that it rests against the side of the tamale with a seam.
Place the tamales in a steamer and cook tamales for 35-40 minutes. Check every 20 minutes.

Easy Baked Trout
One 8 oz trout, boned.
4 slices of lemon.
2 tablespoons of lemon pepper.
1 tablespoon of butter.
1 cup of water.
Preparation Instructions:
Place the fish in suitably sized baking pan with water.
Open the fish and spread with ½ teaspoon of the butter.
Put 2 lemon slices inside trout, add 1 ½ tablespoons of the lemon pepper.
Close the fish and spread the remainder of butter on top.
Place the other 2 lemon slices on top of the butter and then sprinkle with the remainder of the lemon pepper.Bake at 350°F for about 12 minutes.

3 eggplant, peeled and thinly sliced
2 eggs, beaten
4 cups Italian seasoned bread crumbs
6 cups spaghetti sauce, divided
1 (16 ounce) package mozzarella cheese, shredded and divided
1/2 cup grated Parmesan cheese, divided
1/2 teaspoon dried basil
Preheat oven to 350 degrees F (175 degrees C).
Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top. Bake in preheated oven for 35 minutes, or until golden brown.

2 cups fresh or frozen broccoli florets
1 tablespoon sugar
1 tablespoon olive oil
1 tablespoon soy sauce
2 teaspoons rice wine vinegar
2 teaspoons sesame seeds, toasted
Place the broccoli in a steamer basket; place in a saucepan over 1 in. of water. Bring to a boil; cover and steam for 5-7 minutes or until crisp-tender.
Meanwhile, in a small saucepan, combine the sugar, oil, soy sauce and vinegar. Cook and stir over medium heat until sugar is dissolved. Transfer the broccoli to a serving bowl. Drizzle with soy sauce mixture; sprinkle with sesame seeds

4 1/2 pounds beef brisket
1 (1 ounce) envelope dry onion soup mix
1 (10 ounce) can diced tomatoes and green chiles
1 (15 ounce) can tomato sauce
garlic powder to taste
Preheat oven to 325 degrees F (165 degrees C).
Place the beef brisket in a baking dish. In a bowl, mix the onion soup mix, diced tomatoes and green chiles, tomato sauce, and garlic powder. Pour over the brisket.
Loosely cover the brisket with foil. Bake 3 hours in the preheated oven, or to an internal temperature of at least 145 degrees F (63 degrees C).

Easy Pot Roast
4 pounds boneless chuck roast
2 cups water
1 (1 ounce) package dry onion and mushroom soup mix
1 tablespoon Worcestershire sauce
3 potatoes, peeled and chopped
2 stalks celery, chopped
2 carrots, chopped
Preheat oven to 350 degrees F (175 degrees C).
Score roast on top and sides, and place in a medium sized oven bag or wrap in heavy aluminum foil. Combine water, soup mix, and Worcestershire sauce; pour over roast. Arrange vegetables around meat. Place oven bag on a roasting pan. Place roast in oven, and immediately reduce heat to 300 degrees F (150 degrees C). Bake for 3 1/2 hours for medium well done

4 eggs, room temperature
1/4 cup heavy cream at room temperature
1 cup grated Parmesan cheese
16 ounces dry fettuccine pasta
1/4 cup butter, softened
1/4 cup chopped parsley
ground black pepper to taste
Cook bacon until crisp. Drain on paper towels.
In medium bowl beat together eggs and cream just until blended. Stir in cheese and set aside.
Cook pasta according to package directions. Drain and return to pan. Toss with butter until it is melted. Add bacon and cheese mixture and toss gently until mixed. If you are feeling guilty toss in some peas or other green thing, it erases the calories, promiss;)

LOW CARB FRIED CHICKEN TENDERS
6 chicken tenders
1 cup soy flour
1 tbsp. Cajun seasoning
1 tbsp Lawry's garlic salt (coarse w/ parsley)
3 cups of peanut or vegetable oil
Put all ingredients in a gallon baggie except the chicken . Shake up to mix. Then add the chicken, Shake to coat and use tongs to get chicken out of bag, shaking off excess breading.
Add to hot oil and fry 10-15 minutes. Use ranch, Texas Pete, or mix mayo and mustard together for dipping to keep it low carb.

HONEY GRILLED PORK CHOPS
8-10 pork chops
2 cups honey (use more if needed)
soy sauce
Pour honey into a bowl. Add soy sauce, stirring until sauce is a syrupy consistency. Place chops in a bowl or cake pan and cover with 1/2 of the sauce. (Place balance of sauce in a sauce pan.) Let the chops marinate in refrigerator for as long as you wish. Simmer the sauce in the saucepan over low heat until thickened. Place chops on grill, brushing fresh marinade onto chops as needed (use the marinade which was stored in the jar but pour it out into a bowl before brushing so as not to contaminate the remaining gravy.) Cook until juices no longer run pink when pierced by a fork.

Marinade
1 teaspoon sugar
1 teaspoon seasoning salt
1 teaspoon paprika
1 teaspoon pepper
1 teaspoon garlic powder
1 tablespoon olive oil
Mix all marinade ingredients in a zip lock bag add chicken.
Chill and marinade for 4 hours.
Grill chicken on a well oiled grill until well browned on all sides, turning once, 30 to 40 minutes (meat near thigh bones should no longer be pink when tested with the tip of a knife).

1/4 cup lime juice
1 cup salsa
½c red onion, finely chopped
1/2tsp garlic salt
¼ c sour cream
In a bowl, mash avocados with lime juice. Stir in salsa, onions, salt and garlic salt. Serve immediately with tortilla chips.

Shrimp and Pineapple Ceviche
2 cups chopped cooked shrimp meat
1 cup chopped red bell pepper
1 cup chopped fresh pineapple
1 avocado, peeled, pitted and chopped
1/2 red onion, finely chopped
1/2 bunch cilantro, chopped
1 clove garlic, minced
1 serrano pepper, minced, or to taste
2 limes, juiced
salt and pepper to taste
Directions
Stir the shrimp, bell pepper, pineapple, avocado, onion, cilantro, garlic, serrano pepper, lime juice, salt, and pepper together in a glass or ceramic mixing bowl until evenly combined. Cover, and refrigerate 1 hour before serving
