Bargains for September 16, 2009

Someone jokingly asked me “Hey, what about the 99 cent Store” bargains? Well, I started thinking, what about the 99 cent Store! They do have a lot of JUNK, but they also have some great bargains for the savvy shopper. I say it is worth a check.
Here are 2 recipes made with the majority of the ingredients purchased at the 99 cent Only Store.

This first recipe is Black Bean & Corn Salad and is one quick, cheap and filling veggie accompaniment. Pull out this recipe for your next barbecue -- it pairs well with chicken and fish.

Ingredients (about 4 servings)Black Beans - large 1 1/2 lb. or 2 1/2 cups, rinsed and drained.Corn - Two 8 oz. cans or 2 cups, drained.1 cup chopped bell pepper - red, yellow or green (optional) Add chilies if you would like a little extra spice
1 cup chopped onion - red, white or yellow (optional)2 tbsp. olive oil - optional2 tbsp. lemon or lime juice - fresh squeezed or bottled, ok to substitute vinegar.Salt and pepper to taste.
Directions: Drain and rinse canned black beans, then place in a large bowl. Add drained corn. Chop bell pepper and onion. Mix into bowl of black beans and corn. Finally, blend in olive oil and lime or lemon juice. Salt and pepper to taste. Allow to sit for half an hour to marinate at room temperature. Serve with tortilla chips or just as a side for your party!

All manner of cheeses are found in the 99c only Store. California Monterey Jack, European Swiss, Netherlands Tilberg, Austrian "Alps," American style cheddar and mozzarella have been found in the deli cold case. The second recipe is a 3 Cheese Macaroni
Ingredients: 16 oz. package 99 cent elbow macaroni (substitute rigatoni or penne tube pasta to impress)8 oz. each of 99 cent cheddar, swiss, and mozzarella (or any type you can find)2 tablespoons flour2 1/2 cups milk (whole or 2%)1/2 cup pasta water (starchy water left over from cooking pasta)1 tbsp. Dijon mustard or 1 tsp. of dried mustardsalt and pepper to taste (cheese has some salt already)Extra ingredient -- top with one cup of 99cent bread crumbsDirections: Set aside about a 1/2 cup of extra cheese as topping. In a pot, heat flour and slowly whisk in milk then add cheese, stirring until melted, about 15 minutes. In another pot, boil macaroni 5-8 minutes until al dente; drain and set aside. In a large casserole dish mix macaroni and melted cheese mixture and sprinkle extra cheese over dish. Bake uncovered for 20 - 30 minutes at 350 degrees until top is golden brown (cooked covered half the time for a more creamy version). Remove from oven when done and allow to stand for 5 minutes as sauce thickens. *If too dry, make a split down the middle and pour in a 1/4 to 1/2 cup of milk.
