1 (16 ounce) package baby carrots
1/2 cup butter
3 tablespoons honey
1/2 cup brown sugar
Place the carrots into a large pot and cover with salted water. Bring to a boil over high heat until tender, about 15 minutes. Drain and allow to steam dry for a minute or two.
Return the pot to the stove; reduce the heat to medium-low. Melt the butter in the pot. Stir in the honey and brown sugar; add the carrots and stir until evenly coated; cook another 5 minutes

EASY BAKED PORK CHOPS
4-6 boneless pork loin chops
1 can Cream of Mushroom Soup
1 soup can water
1 pkg. onion soup mix
Preheat oven to 350°F. Place chops in baking dish. In bowl, combine soups with water. Pour mixture over chops.
Cover with foil and bake for 30-45 minutes, depending on thickness of chops.
This dish creates its own gravy and is great served with rice!

Easy Steamed Artichokes
2 whole artichokes
2 tablespoons butter
2 cloves garlic, sliced
salt and pepper to taste
Fill the pan with just enough water to cover bottom. Bring to a full boil over high heat. While water is heating, trim and discard the stems and tough outer leaves of artichokes. Tuck slivers of butter and slices of garlic into artichoke leaves.
When water is boiling, place steamer insert in pot and set artichokes in steamer, stem-side down. Cover pot with lid and allow artichokes to steam for approximately 20 minutes, until tender.

EASY DELICIOUS CHICKEN BAKE

6 chicken thighs
1 envelope Good Seasons Italian dressing
Wash and clean chicken thighs, arrange in 9x13 baking dish. Wash and dice up potatoes, carrots, celery and onion. Mix and arrange all around chicken thighs. Mix Good Season's Italian dressing with water, shake thoroughly, and pour over chicken and vegetables. Add more water so that vegetables are somewhat covered. Bake at 350 degrees for 1 hour or chicken looks golden brown. Recipe can be altered for more people. Feeds approximately 3 people.

3 green or red bell peppers

1 clove garlic
Salt to taste
2 lg. onions, sliced thin
Clean and slice peppers into 1/2 inch strips. Cook sausage in large skillet. When cooked remove from skillet and put garlic into oil from sausage. If needed add 1/4 ounce of olive oil. When garlic starts to turn brown add cut up peppers and onions. Cover and let slow cook about 5 minutes. Stir. Cut up sausage into 1 inch pieces. Stir into peppers and onions. Mix well. Add can of tomato sauce. Mix often. Cook on medium heat about 25 minutes. Feeds about 6 to 10 people.

2 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
1 cup soft bread crumbs
1 1/2 teaspoons Creole seasoning
4 tablespoons butter
Rinse and pick over crab meat, discarding any pieces of shell or cartilage. Heat 2 tablespoons butter in a large skillet over low heat; slowly saute finely diced onion, celery, red pepper, and garlic until tender. Whisk egg in bowl; add mayonnaise, Worcestershire sauce, and Creole seasoning. Combine with sauteed vegetables and soft bread crumbs, mixing well. Add the crab meat and form into loose patties; place on waxed paper-lined plate. Refrigerate for about 1 hour, or until firm. Heat remaining 4 tablespoons butter in large skillet over medium-low heat. Gently place crab cakes in skillet and cook for about 5 minutes. Turn and cook for 4 to 5 minutes longer, until cooked through. Serve with a remoulade sauce or tartar sauce. Serves 4.

Directions
Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
Pound chicken breasts to 1/4 inch thickness.
Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately. Serve with packaged Hollandaise Sauce.

Weekly Grocery Specials 2-2 to 2-9-11

4 cloves garlic, minced
1 tsp. salt
1 tsp. pepper
Combine minced garlic, salt and pepper. Rub boneless rib eye with mixture. Put on rack in roasting pan. Set oven at 350 degrees and roast, uncovered for 20 minutes per pound. Sweet Broiled Grapefruit Recipe
Prep/Total Time: 10 min.
1 large grapefruit
2 tablespoons butter, softened
2 tablespoons sugar
1/2 teaspoon ground cinnamon
Cut each grapefruit in half. With a sharp knife, cut around the membrane in the center of each half and discard. Cut around each section to loosen fruit.
Place 1 tablespoon butter in the center of each half. Combine sugar and cinnamon; sprinkle over each. Place on a baking pan. Broil 4 in. from heat until butter is melted and sugar is bubbly. Garnish with a cherry if desired. Serve immediately. Yield: 2 servings

DELICIOUS & EASY OVEN BAKED CHICKEN
8 to 10 chicken drumsticks
1 pkg. dried onion soup mix
1 c. water or chicken broth
8 oz. French dressing
8 oz. apricot jam
In a blender, combine all ingredients (except chicken).
Remove skin from chicken and arrange in a shallow baking pan or casserole. Sprinkle lightly with garlic powder, salt, and pepper, if desired.
Pour 1/2 of the blended mixture over chicken.
Bake in a preheated 350°F for 45 minutes. Turn pieces and pour remaining mixture over chicken and bake for another 30 minutes or until chicken is tender and juices run clear (chicken will read 160°F on a meat thermometer). You may use boneless, skinless chicken breasts for this recipe, if desired.
