Sausage and Peppers
1 can tomato sauce
3 green or red bell peppers
1 lb. Italian sweet sausage
1 clove garlic
Salt to taste
2 lg. onions, sliced thin
Clean and slice peppers into 1/2 inch strips. Cook sausage in large skillet. When cooked remove from skillet and put garlic into oil from sausage. If needed add 1/4 ounce of olive oil. When garlic starts to turn brown add cut up peppers and onions. Cover and let slow cook about 5 minutes. Stir. Cut up sausage into 1 inch pieces. Stir into peppers and onions. Mix well. Add can of tomato sauce. Mix often. Cook on medium heat about 25 minutes. Feeds about 6 to 10 people.

Crab Cakes
8 ounces lump crab meat canned or fresh
1/4 cup finely chopped celery
1/4 cup finely chopped onion
1/2 small clove garlic, finely minced, or dash garlic powder
1 tablespoon finely chopped red bell pepper
1 egg
2 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
1 cup soft bread crumbs
1 1/2 teaspoons Creole seasoning
4 tablespoons butter
Rinse and pick over crab meat, discarding any pieces of shell or cartilage. Heat 2 tablespoons butter in a large skillet over low heat; slowly saute finely diced onion, celery, red pepper, and garlic until tender. Whisk egg in bowl; add mayonnaise, Worcestershire sauce, and Creole seasoning. Combine with sauteed vegetables and soft bread crumbs, mixing well. Add the crab meat and form into loose patties; place on waxed paper-lined plate. Refrigerate for about 1 hour, or until firm. Heat remaining 4 tablespoons butter in large skillet over medium-low heat. Gently place crab cakes in skillet and cook for about 5 minutes. Turn and cook for 4 to 5 minutes longer, until cooked through. Serve with a remoulade sauce or tartar sauce. Serves 4.

4 skinless, boneless chicken breast halves
Salt & pepper
6 slices Swiss cheese
4 slices cooked ham
1/2 cup seasoned bread crumbs
Directions
Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
Pound chicken breasts to 1/4 inch thickness.
Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately. Serve with packaged Hollandaise Sauce.
