Texas broil and London broil are actually cooking methods, not cuts of beef as the grocery industry would have you believe. The cut used for these methods is almost always beef shoulder (chuck). It's a tough cut (tough cuts of meat have the most flavor) of meat but when grilled or broiled at a high temp to rare or medium rare and sliced thin across the grain, it can seem very tender.

Grilled Shrimp
2 pounds fresh shrimp, peeled and deveined
3 cloves garlic, minced, 1/3 cup olive oil, 1/4 cup tomato sauce, 2 tablespoons red wine vinegar, 2 tablespoons chopped fresh basil, 1/2 teaspoon salt, 1/4 teaspoon cayenne pepper
In a large bowl, stir together the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper. Add shrimp to the bowl, and stir until evenly coated. Cover, and refrigerate for 30 minutes to 1 hour, stirring once or twice. Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade. Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque

The "cushion" comes from the Pork Shoulder Picnic (or Arm), The picnic shoulder is more economical than the Boston Butt, but also contains more fat than the blade shoulder. When the bone and fat is trimmed from this cut it results in a very rich flavored roast. The meat from this cut is excellent for making juicy barbecued pulled pork. The Picnic has a large bone and joint that runs through the middle of the roast, one side has a large lean muscle...that is the "cushion". You can also slice and pound them for pork cutlets, stew meat, etc and use them in any chicken recipe.

Bacon Wrapped Salmon
4 (4 ounce) skin-on salmon fillets
1 teaspoon garlic powder
1 teaspoon dried dill weed
salt and pepper to taste
1/2 pound bacon, cut in half
Preheat an oven to 375 degrees F (190 degrees C). Grease a baking sheet liberally with olive oil.
Place the salmon fillets onto the baking sheet skin-side-down. Sprinkle the fillets with garlic powder, dill, salt, and pepper. Lay the bacon strips over the fillets to cover completely. Do not overlap the bacon strips.
Bake in the preheated oven until the salmon is no longer translucent in the center, 20 to 25 minutes. Turn the oven on to broil and cook until the bacon has crisped, 1 to 2 minutes.

What Are Country Style Ribs?
Cut from the blade end of the pork loin, next to the shoulder, these ribs contain a lot of fat, and may or may not contain bone. They are not the easiest eating type of rib for eating with the fingers because of the placement of the fat throughout the meat and the shape of the bone. But they are tasty.

Sloppy Joes (Old Time Favorite)
1 pound lean ground beef
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/2 teaspoon garlic powder
1 teaspoon prepared yellow mustard
3/4 cup ketchup
3 teaspoons brown sugar
salt to taste
ground black pepper to taste
In a medium skillet over medium heat, brown the ground beef, onion, and green pepper; drain off liquids.
Stir in the garlic powder, mustard, ketchup, and brown sugar; mix thoroughly. Reduce heat, and simmer for 30 minutes. Season with salt and pepper. Serve on favorite roll or hamburger bun.

Baked Chicken Breasts
4 chicken breast halves, 2 eggs (no yolks), 1 tablespoon red cracked pepper, 1 tablespoon water, 1 tablespoon garlic powder, 3/4 cup flour
1/4 cup of crumbled tortilla chips or bread crumbs, 2 tablespoons of butter
Preheat oven to 400°F.
Cover a cookie sheet with non stick cooking spray.
Place egg whites and water in a medium sized bowl. Place 1/2 tablespoon red cracked pepper, 1/2 tablespoon garlic powder, and either 1/4 cup of crumbled tortilla chips or bread crumbs in a bowl. Place the rest of the spices and the flour in a ziploc bag.Shake each piece of chicken in the ziploc bag then dip in the bowl of egg mixture then sprinkle the bread crumb/tortilla mixture on each side of each piece of chicken. Place the chicken on the cookie sheet and put 1/2 tablespoon of butter on each piece of chicken.
Place the cookie sheet in the preheated oven and wait 9 minutes. Use tongs to turn the chicken over then wait another 9 minutes
