FRENCH TOAST CASSEROLE
10 slices favorite bread
1/4 lb. soft butter
1/2 c. raisins
2 tsp. cinnamon
3 c. milk
2/3 c. sugar
4 eggs
1 tsp. vanilla
Trim crusts and spread slices generously with butter. Cut each slice into fourths and arrange half on bottom of baking dish. Sprinkle with raisins and 1 teaspoon cinnamon. cover with rest of bread and sprinkle with other teaspoon of cinnamon. Scald milk; remove from heat and stir in sugar until dissolved. Beat eggs thoroughly in a separate bowl. Gradually dribble milk into eggs, beating constantly. Stir in vanilla and pour over bread. Set baking dish in a pan of hot water and bake 40 to 50 minutes at 350 degrees or until knife inserted in center comes out dry. Serve with Maple Syrup

Ingredients:
1 pound fresh strawberries, washed and hulled
1/2 cup sugar
1/4 cup freshly squeezed orange juice
1 teaspoon orange zest
Instructions:
Slice strawberries in 1/4-inch slices and place in mixing bowl.
In a saucepan combine sugar, orange juice and orange zest; bring to a boil over medium heat. Stir with a wooden spoon to dissolve sugar.
Once syrup is at a rolling boil, remove from heat and pour over sliced strawberries. Let sit while cooking waffles. Serve over waffles.

FABULOUS LONDON BROIL MARINADE
2 1/2 pound fresh London Broil
12 oz. can of Dr. Pepper soda
4 oz. olive oil
4 oz. Steak Seasoning
1 clove fresh garlic
Add liquid ingredients, clove of fresh garlic and seasoning to sauce pot set on medium heat. Allow to simmer, turning heat down to low, for 15 minutes.
Allow marinade to cool down to room temperature.
Pour marinade into zip lock bag over London Broil.
Marinate in refrigerator for 4 - 6 hours.
Remove meat from refrigerator and allow to come room temperature.

1 bag (16 ounces) frozen stir-fry vegetables
1 1/2 cups uncooked instant white rice
Heat the oil in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides. Remove the chicken from the skillet.
Stir the soup, water, seasoning mix and vegetables in the skillet and heat to a boil. Stir in the rice. Return the chicken to the skillet. Reduce the heat to low. Cover and cook for 5 minutes or until the chicken is cooked through and the rice is tender.

4 medium red potatoes, cut into 1-inch pieces
4 medium carrots, cut into 1-inch pieces
1 medium onion, cut into 6 wedges
1 (2 to 2 1/2 –lb.) corned beef brisket with seasoning packet
Water
8 thin wedges cabbage
¼ cup applesauce
2 tablespoons Dijon mustard
In a 4-6 qt slow cooker, combine potatoes, carrots and onion. Top with corned beef brisket; sprinkle with seasonings from packet. Add enough water to just cover corned beef.
Cover; cook on low setting for 10-12 hours.
About 35 minutes before serving, remove corned beef from slow cooker; cover with foil. Add cabbage wedges to vegetables and broth. Increase heat setting to high; cover and cook an additional 30-35 minutes or until cabbage is crisp-tender.
Meanwhile, in a small bowl, combine applesauce and mustard; mix well.
To serve, cut corned beef across grain into thin slices, With slotted spoon, remove vegetables from slow cooker. If desired, skim fat from juices in slow cooker. Serve vegetables with juices and corned beef with applesauce-mustard mixture.

Easy oven fried chicken recipe.

1/3 cup butter or margarine
Preheat oven to 425°.
Wash chicken and pat dry with paper towels. In a pie pan, combine flour, paprika, salt and pepper. Coat chicken with the flour mixture.
Put butter in a shallow baking pan; place in oven to melt. When butter is melted, arrange chicken in the baking pan in a single layer, skin side down. Bake at 425° for 30 minutes; turn and bake 15 minutes longer, or until chicken is tender and done. Oven fried chicken recipe serves 4.

Quick, Ez-N-Fast Chicken Strips
4 skinless boneless chicken breasts
1 beaten egg
1 T. Dijon mustard
1 T. water
1/4 C. flour
3/4 C. dry seasoned bread crumbs
2 T. vegetable oil
2 T. butter
1/2 t. lemon pepper seasoning
Cut each chicken breast in 6 pieces. In a small bowl, mix together egg, mustard and water. Add the flour and lemon pepper together on a plate. Place the breadcrumbs on another plate or wax paper. Dip the strips in the flour, then the egg and the breadcrumbs. Repeat until you have coated all the chicken.
In a 12 inch skillet add the oil and butter. Add the chicken and brown on all sides. It should take about 6 minutes. Season with salt. Serve with your choice of dipping sauce or ranch dressing.

Place the shrimp in a large bowl. Stir garlic, red onion, and cilantro. Mix in tomato and clam juice cocktail, ketchup, lime juice, hot pepper sauce, and horseradish. Season with salt. Gently stir in avocado. Cover, and refrigerate 2 to 3 hours. Serve in one large bowl or ladle into individual bowls.

Roasted Cauliflower Recipe
1 head of cauliflower
2-3 cloves of garlic, peeled and coarsely minced
Lemon juice from half a lemon
Olive oil
Coarse salt and freshly ground black pepper
Parmesan cheese
Preheat oven to 400°F. Cut cauliflower into florets and put in a single layer in an oven-proof baking dish. Toss in the garlic. Sprinkle lemon juice over cauliflower and drizzle each piece with olive oil. Sprinkle with salt and pepper. If the oven hasn't reached 400°F yet, set aside until it has.
Place casserole in the hot oven, uncovered, for 25-30 minutes, or until the top is lightly brown. Test with a fork for desired doneness. Fork tines should be able to easily pierce the cauliflower. Remove from oven and sprinkle generously with Parmesan cheese. Serve immediately.

Quick, Ez-N-Fast Chicken Strips
4 skinless boneless chicken breasts
1 beaten egg
1 T. Dijon mustard
1 T. water
1/4 C. flour
3/4 C. dry seasoned bread crumbs
2 T. vegetable oil
2 T. butter
1/2 t. lemon pepper seasoning
Cut each chicken breast in 6 pieces. In a small bowl, mix together egg, mustard and water. Add the flour and lemon pepper together on a plate. Place the breadcrumbs on another plate or wax paper. Dip the strips in the flour, then the egg and the breadcrumbs. Repeat until you have coated all the chicken.
In a 12 inch skillet add the oil and butter. Add the chicken and brown on all sides. It should take about 6 minutes. Season with salt. Serve with your choice of dipping sauce or ranch dressing.

½ C vegetable stock
8 fresh parsley sprigs (leaves only)

Wash clams. Combine olive oil and butter in saucepan, low heat Add clams, chopped garlic and parsley (blended together), add red and black pepper. Cover and cook 2 minutes. Add veg stock, cook 3 more minutes. Add Marinara sauce and cook for approximately 10 more minutes or until all clams are open. Serve with Fresh Italian bread or garlic bread.
