1/4 cup butter
1 clove garlic, minced
1 1/2 teaspoons dried parsley

Directions

GREEN CHILE
5 (7 oz.) cans whole green chilies (Ortega or Old El Paso)
1 lg. brown onion, chopped
1 - 1 1/2 lbs. cubed fresh pork
2 (15 oz.) cans chicken broth
1 (12 oz.) jar mild green chile salsa (Ortega or your favorite brand)
1 sm. can diced jalapeno peppers (optional)
1/2 c. white flour
1 tsp. ground cumin seed
1 tsp. garlic powder
1 tsp. each salt & black pepper
Fry the pork and onion in a large frying pan at medium to medium high heat. While it is cooking, add the cumin seed, garlic powder, salt and pepper. After the pork and onions have cooked, the pork should appear light brown with no red color present. Pour off the majority of the grease in the pan and add the flour. Stir the contents until the flour has cooked in well with the pork. While the pork is cooking, cut the green chiles into small bite-size pieces. Put these in a crock pot. Add the chicken broth and salsa. Turn on the crock pot to high temperature. Add the pork. When it is ready. Cook on high for 2 hours, stirring occasionally. After 2 hours set the crock pot to low and continue cooking for approximately 5 hours.

Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain and chop. Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; peel and chop. Grilled Brown Sugar Pork Chops
1/2 cup brown sugar, firmly packed
1/2 cup apple juice
4 tablespoons vegetable oil
1 tablespoon soy sauce
1/2 teaspoon ground ginger
salt and pepper to taste
2 teaspoons cornstarch
1/2 cup water
6 boneless pork chops
Directions
Preheat an outdoor grill for high heat.
In a small saucepan, combine brown sugar, apple juice, oil, soy sauce, ginger, salt , and pepper. Bring to boil. Combine water and cornstarch in small bowl, and whisk into brown sugar mixture. Stir until thick.
Brush grate lightly with oil before placing pork chops on the grill. Cook over hot coals for 10 to 12 minutes, turning once. Brush with sauce just before removing chops from grill. Serve with remaining sauce.

Kosher salt
Freshly ground black pepper
Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry.
Add the butter and oil to a 12 to 14-inch sauté pan on high heat. Salt and pepper the scallops. Sear the scallops for 1 1/2 minutes on each side. The scallops should have a 1/4-inch golden crust on each side while still being translucent in the center. Serve immediately.

Have you heard of Swai fish? Well, This is a fresh water fish that produces a wonderful mild flavored flaky, white meat. A versatile fish, you can bake, bread and fry, and poach it. Because of its mild flavor, it lends well to sauces and various spices. This is an unbelievable low price when you consider Halibut, Salmon, or Sole running 3 to 4 times that amount. To top it off, it is very nutritious as well, with only 100 calories per 4 ounces, 2 to 3 grams of fat, and about 50 mg. of cholesterol. These figures are even lower than chicken.
Poaching or baking of course will keep the fat and cholesterol amounts low; however, breading and sautéing produces an incredible entree that is crunchy, moist, and very savory. Marinate this fish with olive oil, juices from 1 Meyer lemon, garlic, a dash of rice vinegar, salt and pepper, for about 4 hours in the fridge. Then I dredged each piece in flour, followed by a bath in an egg wash, and finally rolled it in a dish of Panko bread crumbs Heat up about 2 cups of vegetable oil to 350 degrees and fried each side for about 2 minutes, and finally transferred the fish to a 350 oven for about 15 minutes. It turned out so incredible!

Directions

HONEY AND HERB GRILLED PORK
3 lbs. boneless pork loin roast
1/2 c. honey
1/4 c. vegetable oil
1 1/2 tsp. rosemary leaves, crushed
1/4 tsp. black pepper
1 c. beer or ginger ale
1/2 c. dijon mustard
2 tbsp. onion powder
1 tsp. salt
1 tsp. garlic powder
Place pork in heavy plastic bag. Combine remaining ingredients; pour over pork. Seal bag. Marinate in refrigerator 1 hour. Remove pork from marinade. Place over drip pan filled with 1 inch of water on grill. Grill, uncovered, or bake at 350 degrees for 30 minutes per pound or until 160 internal temperature, basting occasionally. Simmer any leftover marinade 5 minutes. Serve with roast.

Coconut Crusted Fish & Mango Salsa
This seafood entree is coconut sweet and a breeze to make. If you like Coconut Shrimp then you will love my Coconut Crusted Fish. And you don't need to deep fry it, just sauté in a little oil until lightly browned. Sautéing fish coated with shredded coconut flakes makes any cheap frozen fish fillet sweetly delectable. It is best to go with a firmer fish (I used shark) like: salmon, mahi mahi, wahoo, tuna, cod and tilapia.
Many markets often sell 4-6 ounce packages of fish, in their frozen deli bins, for around a dollar - this is perfect for one serving. Of course, this recipe is great with locally fresh caught fish.
Coconut Crusted Fish you will be hooked !
Ingredients (one serving)
4 to 6 oz. fish fillet(s) for 99 cents - defrosted and drained of water. Any fish you have on hand will work.
1/4 cup coconut - shredded from package.
3 tablespoons of cornstarch or flour.
Salt and pepper to taste.
4 tablespoons of oil for sauteing - start with 2, then add more as needed during sauteing.
Heat 2 tablespoons of oil in a pan over medium/low heat. Use defrosted fish and drain fillet(s). On a flat plate mix coconut, cornstarch (or flour), and season with salt and pepper. Coat fish well on all sides and place in hot saute pan. Let fish cook on one side without turning - look at bottom of fish and wait until edges brown, about 3-5 minutes. Add more oil if needed, then turn fish to cook the other side a few minutes more (if fillets are thick, then you might want to also cook sides to take out any raw coating taste).
Depending on thickness of fish, it's done when firm to the touch. If some of the browning coconut coating comes off, just place it on the fish when done. Serve topped with Mango Salsa.

1 mango - peeled and diced.
1/4 cup of chopped onion - red, white or yellow.
Juice of a lime or lemon - or 2 tablespoons from a jar.
Jalapeno - to desired hotness, about a teaspoon, chopped.
Mix well: lemon or lime juice, chopped mango, onion and jalapeno (add a little jalapeno at a time and taste for desired heat).

Grilled Peaches
Peaches, 1 for each person
1/2 cup sherry vinegar or balsamic vinegar
1/4 cup brown sugar
juice of 1 lemon
1/4 teaspoon freshly ground black pepper
Halve the peaches, remove pits. Drizzle with about 2 teaspoons of the lemon juice. Cover with plastic wrap and set aside. In a small saucepan, combine vinegar, brown sugar, remaining lemon juice and black pepper. Boil until reduced by about 1/2. Place peaches cut-side down on a hot lightly oiled grill. Cover and cook for about 2 minutes, or until there are grill marks. Turn over and baste the cut sides with the vinegar mixture. Cover the grill and cook for about 3 more minutes, or until softened.

FABULOUS LONDON BROIL MARINADE
2 1/2 pound fresh London Broil
12 oz. can of Dr. Pepper soda
4 oz. olive oil
4 oz. Steak Seasoning
1 clove fresh garlic
2 tbsp. of Montreal Grilling Mates
Add liquid ingredients, clove of fresh garlic and seasoning to sauce pot set on medium heat. Allow to simmer, turning heat down to low, for 15 minutes.
Allow marinade to cool down to room temperature.
Pour marinade into zip lock bag over London Broil.
Marinate in refrigerator for 4 - 6 hours.
Remove meat from refrigerator and allow to come room temperature.
Cook on grill at 400°F until meat reaches desired temperature and doneness.
