*Fresh Whole Chicken .69lb
Slow Cooker “Baked” Chicken
1 (2 to 3 pound) whole chicken
salt and pepper to taste
1 teaspoon paprika
Directions
Wad three pieces of aluminum foil into 3 to 4 inch balls, and place them in the bottom of the slow cooker.
Rinse the chicken, inside and out, under cold running water. Pat dry with paper towels. Season the chicken with the salt, pepper and paprika, and place in the slow cooker on top of the crumbled aluminum foil.
Set the slow cooker to High for 1 hour, then turn down to Low for about 8 to 10 hours, or until the chicken is no longer pink and the juices run clear.

*Whole Pork Picnic Roast 1.27lb
DEEP SOUTH BBQ
5-6 lb. fresh picnic or pork roast
2 onions, sliced
4-5 whole cloves
2 c. water
Place 1/2 sliced onion in bottom of crock pot. Add pork, other 1/2 sliced onion on top of pork, cloves and water. Cook on low 8 to 12 hours. Remove pork from pot and remove bones and fat. Also discard any remaining juice in pot. Chop meat and place back in crock pot. Add 1 diced onion (optional) and BBQ sauce (approximately a 16 ounce bottle) or your own sauce. Cook on low for 1-2 hours.

Butternut Squash Soup
1 (2 to 3 pound) butternut squash, peeled and seeded
2 tablespoons unsalted butter
1 medium onion, chopped
6 cups chicken stock
Nutmeg
Salt and freshly ground black pepper
Cut squash into 1-inch chunks. In large pot melt butter. Add onion and cook until translucent, about 8 minutes. Add squash and stock. Bring to a simmer and cook until squash is tender, about 15 to 20 minutes. Remove squash chunks with slotted spoon and place in a blender and puree. Return blended squash to pot. Stir and season with nutmeg, salt, and pepper. Serve.

EASY APPLE CRISP
1 c. sugar
2 tsp. lemon juice
1/4 c. water
1/2 tsp. cinnamon
6 peeled and sliced large apples
3/4 c. flour
1/4 tsp. salt
6 tbsp. butter
Combine 1/2 c. sugar, lemon juice, water and cinnamon in bottom of small baking pan. Slice in apples. Blend remaining 1/2 c. sugar, flour, salt and butter until crumbly. Spread over apples and pat smooth.
Bake at 375°F. for 40-50 minutes, until apples are tender and crust is browned. Serve hot with ice cream.

Roasted Pork Loin
3 cloves garlic, minced
1 tablespoon dried rosemary
salt and pepper to taste
2 pounds boneless pork loin roast
1/4 cup olive oil
Preheat oven to 350 degrees F (175 degrees C).
Crush garlic with rosemary, salt and pepper, making a paste. Pierce meat with a sharp knife in several places and press the garlic paste into the openings. Rub the meat with the remaining garlic mixture and olive oil.
Place pork loin into oven, turning and basting with pan liquids. Cook until the pork is no longer pink in the center, about 2 hours. An instant-read thermometer inserted into the center should read 160 degrees . Remove roast to a platter. Serve with pan juices.

CAULIFLOWER-BROCCOLI CHEESE SOUP
6 chicken bouillon cubes
6 c. water
1 c. diced onion
1 c. diced celery
1 c. diced carrots
1 c. cubed potatoes
1/2 head cauliflower
1/2 head broccoli
1 lb. Velveeta cheese
2 cans cream of chicken soup
Dissolve bouillon cubes in boiling water. Add onion and celery. Cover and simmer for 20 minutes. Add carrots and potatoes. Cover and simmer for 20 minutes. Add cauliflower and broccoli; cover and simmer for 20 minutes. Add cheese and soup. Stir until cheese is melted. Serves 12.
