2 (6 ounce) swordfish steaks
2 tablespoons lemon juice
1 tablespoon lemon pepper
1 tablespoon dried dill weed
Preheat an outdoor grill for high heat, and lightly oil grate. Place swordfish steaks in a medium bowl, and brush with lemon juice. Coat each side with lemon pepper and dill. Place swordfish on the prepared grill, and cook 6 minutes on each side, or until fish is easily flaked with a fork.

1 large onion cut in thin strips
2 green, red or yellow bell peppers cut in strips
Guacamole, Salsa Pico de Gallo, 1 cup sour cream
Flour tortillas
Heat 1 tbsp. oil in large skillet over high heat. Add onions; cook, stirring occasionally, until starting to brown, about 3 minutes. Add peppers to pan. Cook, stirring occasionally, until starting to brown, about 3 minutes more. Season vegetables with Sazonador Total and Adobo; transfer to large serving platter. Cover vegetables with foil to keep warm. Heat remaining oil in skillet over high heat. Add beef; cook, in batches, until brown on all sides, about 10 minutes. Transfer meat to serving platter. To serve, spoon meat and vegetables into center of warm tortillas. Add guacamole, pico de gallo, sour cream.

Fry bacon in large skillet until crisp. Set bacon aside and crumble. Sauté onion in bacon drippings. Add remaining ingredients, cover and cook over low heat for 10 minutes.

Chicken Fajita Soup
2 tablespoons vegetable oil
1 pound skinless, boneless chicken breasts, cut into strips
1 (1.27 ounce) packet fajita seasoning
1 red bell pepper, cut into thin strips
1 green bell pepper, cut into thin strips
1 poblano pepper, cut into thin strips
1 large onion, cut into thin strips
1 (14.5 ounce) can fire roasted diced tomatoes
1 (15 ounce) can seasoned black beans
1 (14 ounce) can chicken broth
1 dash hot sauce
salt and pepper to taste
Heat oil in a large soup pot over medium heat. Place chicken in the hot oil; cook, stirring only occasionally, until brown, about 10 minutes. Sprinkle fajita seasoning over the browned chicken and stir well to coat. Add the red and green bell pepper, poblano pepper, and onion to the seasoned chicken. Stir and cook over medium heat until the vegetables are soft, about 10 minutes. Pour the fire roasted tomatoes, black beans, and chicken broth into the pot with the chicken and vegetables. Bring the soup to a boil over high heat, then reduce the heat to medium-low, and simmer uncovered for 30 minutes, stirring occasionally.
Season the soup with hot sauce, salt, and pepper to taste before serving

1 stick butter
1/2 cup brown sugar
4 bananas peeled and halved, cut lengthwise
The recipe calls for Dark Rum, which I omit. Can sub Rum extract, I like with out!
Melt butter in a large skillet. Add brown sugar and stir together. Add the bananas and cook until caramelized over medium-high heat. Serve over vanilla ice cream and/or a slice of pound cake.

Garlic Buttered Green Beans
1 pound fresh green beans
1/2 cup sliced fresh mushrooms
6 tablespoons butter or margarine
2 teaspoons onion powder
1 teaspoon garlic powder
salt and pepper to taste
Cook green beans in water to cover until crisp-tender. Meanwhile, in a skillet, saute mushrooms in butter until tender. Add onion powder and garlic powder. Drain beans; add to skillet and toss. Season with salt and pepper
