Weekly Grocery Specials 11-3-10 to 11-10-10

Tri Tip Roast Supper
1 beef tri-tip roast (approximately 2 pounds)
1 teaspoon dried rosemary leaves, crushed
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon olive oil
2 medium sweet onions, cut into 1-inch thick wedges
2 large sweet potatoes, peeled and quartered
Combine rosemary, garlic, salt and pepper to form a paste. Spread half of the herb paste evenly over surface of beef tri-tip roast. Add oil to remaining herb paste and mix well. Place vegetables in a large bowl. Pour herb-oil mixture over vegetables and sitr to coat evenly. Roast in preheated 425°F oven for 35 to 40 minutes for rare to medium. While roast is standing, increase oven temperature to 475°F. Continue cooking vegetables 10 minutes or until tender and lightly browned. Carve roast across the grain into thin slices. Serve with vegetables

Easy Beef & Broccoli Stir Fry
3 tablespoons cornstarch, divided
1/2 cup water, plus,2 tablespoons water, divided
1/2 teaspoon garlic powder
1 lb boneless round steak or 1 lb charcoal chuck steak, cut into thin 3-inch strips (Beef Stir Fry)
2 tablespoons vegetable oil, divided
4 cups broccoli florets,1 small onion, cut into wedges,1/3 cup soy sauce,2 tablespoons brown sugar,1 teaspoon ground ginger
In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth. Add beef and toss. In a large skillet or wok over medium high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm. Stir-fry broccoli and onion in remaining oil for 4-5 minutes. Return beef to pan. Combine soy sauce, brown sugar, ginger and remaining cornstarch and water until smooth; add to the pan. Cook and stir for 2 minutes. Serve over rice.

PENSACOLA RED SNAPPER
4 (8 to 10 oz.) red snapper fillets
1 tsp. salt,Freshly ground black pepper
1/4 c. fresh lemon juice, strained
2 tbsp. olive oil
1 1/2 tsp. garlic, finely chopped
1 tsp. dry oregano, crumbled
2 med. sized firm, ripe tomatoes, washed, cored & cut crosswise into 1/4-inch slices
1 tbsp. parsley, finely chopped
Preheat the oven to 400°F. Pat the red snapper fillets completely dry with paper towel and season them on both sides with the salt and a few "grindings" of pepper. Combine the lemon juice, olive oil, garlic and 1/2 teaspoon of the oregano in a shallow dish just large enough to hold the fillets in one layer. Stir lemon juice mixture until the ingredients are well blended. Then add the fillets and turn them about to moisten them evenly. Arrange the fillets, skin side up. Place the tomato slices over them and sprinkle the remaining 1/2 teaspoon of oregano on top. Bake in middle of oven for 10 to 12 minutes, or until fillets flake easily when pressed gently with a fork. Sprinkle the parsley and serve the fillets at once directly from the baking dish.

Grilled Asparagus
1 pound fresh asparagus spears, trimmed
1 tablespoon olive oil
salt and pepper to taste
Preheat grill for high heat.
Lightly coat the asparagus spears with olive oil. Season with salt and pepper to taste.
Grill over high heat for 2 to 3 minutes, or to desired tenderness.

4 yellow squash
1 tablespoon minced onion
1 tablespoon butter
1/2 cup milk
salt and pepper to taste
Slice and steam or boil squash until tender. Pour off any remaining water.
Mash the squash slightly. In a medium size pot place mashed squash, onion, butter, milk, salt and pepper. Mix well and heat over a medium flame. Serve warm.

EASY APPLE CRISP
1 c. sugar, 2 tsp. lemon juice, 1/4 c. water, 1/2 tsp. cinnamon, 6 peeled and sliced large apples, 3/4 c. flour, 1/4 tsp. salt, 6 tbsp. butter
Combine 1/2 c. sugar, lemon juice, water and cinnamon in bottom of small baking pan. Slice in apples. Blend remaining 1/2 c. sugar, flour, salt and butter until crumbly. Spread over apples and pat smooth.
Bake at 375°F. for 40-50 minutes, until apples are tender and crust is browned. Serve hot with ice cream.
