FRESH GREEN BEANS
2 lbs. fresh green beans
4 slices bacon, diced
2 sm. onions, diced
1 c. water
2 tsp. salt
1/2 tsp. sugar
1/4 tsp. pepper
Wash and snap beans into 1 to 1 1/2 inch pieces. In a large Dutch oven, fry bacon and onion until browned. Add green beans and remaining ingredients. Heat to boiling, then cover pan. Lower heat and simmer 30 minutes or until beans are tender. Serves 8.

Butterscotch Yams
6 medium Yams -- cooked, peeled, quartered
1/2 cup Light corn syrup
1/2 cup Firmly packed light brown Sugar
1/4 cup Evaporated skim milk
1 teaspoon Butter
1/4 teaspoon Salt
1/2 teaspoon Cinnamon
Preheat oven to 325F.
Arrange yams in single layer in 13x9x2 inch baking dish. Bake 15 minutes.
Meanwhile, combine remaining ingredients in a medium saucepan. Stirring constantly, bring to boil over medium heat, boil for 5 min. Pour over yams. Return dish to oven and bake, basting frequently, for at least 15 minutes.

Maple and Brown Sugar Glazed Ham
1 fully cooked ham, about 6 to 8 pounds
1/2 cup pure maple syrup
1/2 cup brown sugar
1/2 cup apple juice
1 heaping tablespoon brown or Dijon mustard
dash cinnamon and ginger or allspice, optional
Place ham, fat side up, on rack in a foil-lined roasting pan; score fat and stud with cloves, if desired. Cook at 325° for about 18 minutes per pound, until meat thermometer or instant read thermometer registers 148°. Combine glaze ingredients in saucepan; bring to a boil and boil for about 2 minutes (be careful not to let it boil over). About 20 minutes before the ham is done, spoon about half of the glaze over top of ham, then about 10 minutes before done, spread remaining glaze over ham.

Easy Baked Apples
4 tart green apples
1/2 cup brown sugar
4 tablespoons butter
2 teaspoons ground cinnamon
Preheat oven to 350 degrees F (175 degrees C).
Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter. Place in a shallow baking dish and sprinkle with cinnamon. Bake in preheated oven for 15 minutes, until sugar begins to caramelize and apples are tender.

MEXICAN SHRIMP COCKTAIL
1 large can V-8 juice or Clamato
2 avocados, chopped
2 cucumbers, seeded and chopped
1 medium red onion, chopped
1/2 bunch cilantro, chopped
1 jalapeƱo, seeded and chopped
1 pound large shrimp, peeled, de-veined and steamed *
limes, quartered
Tabasco sauce
Mix all ingredients in a large non-reactive container. Let sit for a few hours in refrigerator, or overnight. Serve with limes and Tabasco sauce.
