Grilled Chicken Salad with Seasonal Fruit
1 pound skinless, boneless chicken breast halves
1/2 cup pecans
1/3 cup red wine vinegar
1/2 cup white sugar
1 cup vegetable oil
1/2 onion, minced
1 teaspoon ground mustard
1 teaspoon salt
1/4 teaspoon ground white pepper
2 heads Bibb lettuce - rinsed, dried and torn
1 cup sliced fresh strawberries
Directions
Preheat the grill for high heat.
Lightly oil the grill grate. Grill chicken 8 minutes on each side, or until juices run clear. Remove from heat, cool, and slice.
Meanwhile, place pecans in a dry skillet over medium-high heat. Cook pecans until fragrant, stirring frequently, about 8 minutes. Remove from heat, and set aside.
In a blender, combine the red wine vinegar, sugar, vegetable oil, onion, mustard, salt, and pepper. Process until smooth.
Arrange lettuce on serving plates. Top with grilled chicken slices, strawberries, and pecans. Drizzle with the dressing to serve

3 tablespoons olive oil
1/2 cup onion, chopped
2 cloves garlic, minced
3 pounds boneless pork shoulder, cubed
5 (7 ounce) cans green salsa
1 (4 ounce) can diced jalapeno peppers
1 (14.5 ounce) can diced tomatoes
Directions
Heat the oil in a large skillet or Dutch oven over medium heat. Add the onion and garlic; cook and stir until fragrant. Add the cubed pork, and cook until browned on the outside. Transfer the pork, onions, and garlic to a slow cooker, and stir in the green salsa, jalapeno peppers, and tomatoes.
Cover, and cook on High for 3 hours. Reduce the setting to Low, and cook for 4 to 5 more hours.

Easy Honey Grilled Pork Chops
8-10 extra thin sliced pork chops
2 cups honey (use more if needed)
soy sauce
These chops may be grilled or baked in the oven. Grilling on the BBQ is the best.
Pour honey into a bowl. Add soy sauce, stirring until sauce is a syrupy consistency. Place chops in a bowl or cake pan and cover with 1/2 of the sauce. (Place balance of sauce in a sauce pan.)
Let the chops marinate in refrigerator for as long as you wish. They can marinate all day for a stronger flavor or they can be dipped and grilled. Either way works.
Simmer the sauce in the saucepan over low heat until thickened. Store in a glass jar in refrigerator until needed.
Place chops on grill, brushing fresh marinade onto chops as needed (use the marinade which was stored in the jar but pour it out into a bowl before brushing so as not to contaminate the remaining gravy.)
Cook until juices no longer run pink when pierced by a fork. Chops may alternatively be baked in oven.
When chops are finished, pour sauce from the jar into a gravy dish (sauce will be thin) and serve chops accompanied by sauce, as desired

Country Fried Chicken
Serves 2 (but easy to multiply) Great for picnics
1/3 cup all-purpose flour
1 teaspoon garlic salt
1 teaspoon pepper
1/2 teaspoon paprika
1/4 teaspoon poultry seasoning
1 egg, beaten
1/4 cup 2% milk
2 chicken thighs
2 chicken drumsticks
canola oil
In a large reusealable plastic bag, combine the first five ingredients. In a shallow bowl, beat the egg and milk. Add chicken to bag, a few pieces at a time, and shake to coat. Dip into egg mixture, then return to flour mixture and shake again. Remove from bag and let stand for 5 minutes.
Heat about 1 in. of oil in a large skillet. Fry chicken until golden brown on all sides. Reduce heat to medium and cook until a meat thermometer reads 180°, about 15 minutes.

Topping:
¼ cup brown sugar

Directions:
Slice grapes in half. In a large mixing bowl combine sugar; softened cream cheese and sour cream. Using electric mixer cream ingredients. Mixture will still have some small lumps. Once mixed, add grape halves and cheddar cheese. Stir by hand until well blended. Refrigerate over night. Just before serving add pecans and brown sugar mixture.

Prepare grill.

Concerts In The Parks And Shakespeare By The Sea

The Newport Beach City Arts Commission will host four evenings of free family arts entertainment at local parks this summer including two Concerts in the Parks and two evenings of Shakespeare by the Sea. All of these summer events are free and open to the public. Those planning to attend should bring lawn chairs and a picnic dinner to fully enjoy the entertainment under the stars.

The Center’s Free for All Series continues with the enormously popular free Movie Mondays on the community plaza. This year’s line-up will be the biggest and best ever with five great movies: The Wizard of Oz (July 12) with Judy Garland; Some Like it Hot (July 19) starring Marilyn Monroe, Tony Curtis and Jack Lemmon; Oliver! (July 26),being presented in partnership with public radio station KCRW-Santa Monica (89.9 FM and www.KCRW.com);
Dirty Dancing (August 2) featuring Jennifer Grey and Patrick Swayze; and Mad Hot Ballroom (August 9), which was chosen in an audience poll last summer. The series, presented in
association with the Newport Beach Film Festival, takes place on the Center’s outdoor plaza, with the films projected on a large screen on the side of Segerstrom Hall. Picnic dinners are encouraged, with setup starting at 5:30 p.m. There will fun contests and prizes at each event. No cooking or barbecuing is allowed.

Rib Eye Steak Dad Style
Ingredients
2 (10 ounce) marbled beef rib-eye steaks
2 teaspoons garlic powder, or to taste
1 teaspoon salt
1 teaspoon ground black pepper
2 (12 fluid ounce) cans cola-flavored carbonated beverage
2 cups barbeque sauce
8 slices bacon
Sprinkle a thin coating of garlic powder over both sides of the steaks, then sprinkle with salt and pepper.
Place steaks in a shallow dish, and pour the cola over them. Cover, and marinate in the refrigerator for 4 hours, turning steaks over every hour or so. During the last hour, coat the steaks with a thin layer of barbeque sauce.
Preheat an outdoor grill for high heat.
Lightly oil the grilling surface. Place steaks on the grill over high heat, and cook until almost burnt on each side, about 4 minutes per side. Reduce the grill's heat to medium-low, or move steaks to a cooler part, and place the bacon strips on top of them. Cover, and slow cook for 10 minutes per side.
Spread a thin layer of barbeque sauce over the steaks during the last few minutes of cooking

Feed Dad Café Rio style!

You can’t go there on Sunday anyway! Make sure you read all the recipes in the bargains. I tried to re-create the famous Café Rio Pork. I found out the secret was Dr Pepper, but I didn’t follow the recipe, because I thought I would make it better, Well it came out way too sweet. Try this recipe. I do have one tip, I used about ½ the cooking time in my crock pot and the meat was on the verge of disintegrating it was so tender. Make sure either lower the time or the temp.

Cafe Rio Pork Barbacoa
5-6 lb. pork roast
21 oz. Dr. Pepper (or Coke, do NOT use diet soda)
1 cup brown sugar
3/4 cup white sugar
1 clove garlic, minced
7 oz. can chipotle chilies in adobo sauce
6-ish oz. red taco sauce
1 tsp dry mustard
1 tsp cumin
1/4 tsp cayenne pepper
Place roast in crock-pot, cover half-way with water and cook on low for 12 hours. (I started my Pork Adventure at midnight and everything worked out perfectly for Sunday dinner at 6:00 pm.) After 12 hours, drain pork (retain liquid if you want sauce for burritos, simply mix with a can of verde enchilada sauce and away you go).
Mix remaining ingredients until sugar dissolves. I didn’t keep the actual chilies, I dumped the can into a bowl and added enough Dr. Pepper to get all the sauce off of the chilies, then I tossed them. I also rinsed out the can with Dr. Pepper for more adobo goodness. My version had a fairly good kick to it, but if you LOVE hotness, then blend everything + 2 or 3 chilies in the blender. (Also, the adobo sauce tends to stain plastic, using a glass or metal mixing bowl will make your clean-up of adobo sauce considerably less frustrating).
Add Dr. Pepper mixture to the roast and cook on low an additional 4 hours.
Take out roast and shred, add back into sauce and cook for 2 more hours. At this point the meat was so tender it practically shredded itself.

Café Rio Easy Pico-de-Gallo
3 tomatoes, diced
1/2 bunch of cilantro, minced
1/2 sweet onion, minced
1 section of green pepper, minced
3-4 cloves garlic, minced
about 1/3-1/2 cup vinegar
salt and pepper
Mix it up really well and refrigerate. I put my pico in a Tupperware and shook it up really well right before serving to re-mix.

1 pkg. Ranch dressing mix
3 tomatillos (remove papery skin), rough chop
1 cup mayo
1 cup buttermilk
1 cup (or more) cilantro, rough chop
3 cloves garlic
1/8 tsp cayenne pepper
2 tsp green Tabasco sauce
juice from 1 lime
Dump everything in a blender and blend until smooth. Refrigerate in air-tight container


Put together the Café Rio Burrito!
Tortilla – you can make your own, mine came from a package.
Cheese -it is a good idea to warm these two up so the cheese is a little melty.
Beans – black or pinto (mine came straight out of the can, warmed in the microwave with a little garlic powder and green Tabasco sauce).
Rice – don’t be stingy now!
Pork - I am actually salivating while writing this post…
Lettuce – Shredded Romaine, you want small enough pieces to get a little of everything on your fork
Pico de Gallo – I like extra pico, so I give myself an extra scoop.
Tortilla Strips – slice a corn tortilla into strips, brush with olive oil and salt and pepper and bake on a foil-covered sheet for 15-20 minutes at 350-ish.
Creamy Tomatillo Dressing – I like to keep mine on the side so my lettuce doesn’t get too slobbery.


Cafe Rio Cilantro Rice
3 cups. water
4 cloves minced garlic
1/2 bunch chopped cilantro
1/2 medium onion, chopped
1 can (4 oz) green chilies
4 tsp. chicken bouillon
1 tsp. cumin
3/4 tsp. salt
1 TB butter
3 cups rice, uncooked
Bring water to a boil in large pot, add all ingredients. Cook covered for 30 minutes, or until rice is done.


Garlic-Lime Vinaigrette
1/4 cup fresh lime juice
1 clove garlic, minced
1/4 tsp. salt
1/4 tsp. dried red-pepper flakes
1/3 c. olive oil
2 TB chopped cilantro
Whisk lime juice, garlic, salt & pepper. Slowly add olive oil while stirring. Add cilantro. Serve over grilled chicken, white fish, or whatever else suits you
r fancy.

1 clove of garlic, 2 serrano peppers (sautéed in butter until dark in color), 2 lbs. canned or fresh tomatoes (quartered if fresh), 5 jalapeños, 1/4 yellow onion, salt, to taste
In a running food processor using a knife blade, drop one clove peeled garlic, 5 jalapeños, 1 quarter of a yellow onion, and two Serrano peppers down the tube. Open lid and place two pounds quartered fresh tomatoes or one large can of chopped tomatoes in with the garlic and peppers.
Pulse on and off until the desired consistency. Add salt to taste and serve with warm tortilla chips.

BARBECUE BEEF BRISKET
Soak beef brisket overnight in 1 bottle of soy sauce, 1 can beef consomme or 2 bouillon cubes, juice of 1 lemon and 1/4 teaspoon garlic salt. Pour off liquid. Sprinkle with paprika. Wrap in foil. Bake at 325 degrees for 4 hours. Cool and refrigerate. Slice cross the grain. May be frozen at this point.
Mix Barbecue Sauce: 4 tbsp. Worcestershire sauce 4 tbsp. brown sugar 4 tbsp. vinegar
Simmer 10 minutes. Add 2 teaspoons Liquid Smoke. Pour sauce over meat wrapped in oil. Bake 1/2 to 1 hour at 300 degrees.

MARINADE:
1/2 c. soy sauce
1/4 c. vegetable oil
2 tbsp. molasses

CAFÉ RIO ---WAHOO’S ,FRESCA’S, AND ALL THE OTHER MEX RESTAURANTS----WATCH OUT!....THIS MEX RESTAURANT IS IN EVEN IN THE ZAGAT GUIDE!!!

Just in case you’ve haven’t heard…CAFÉ RIO just opened up in the old Winchell’s location on 17 th street …..

This restaurant chain started in St George ,Utah… a great place stop off for some excellent Mexican food on the way to or from conference, a winter ski trip, or for summer fishermen (on their way to/from their annual Beaver, Utah trout fishing pilgrimage)….

My favorite is the Pork Barbacoa taco, quesadilla, salad, enchilada, or ANTYTHING with the PORK BARBACOA!!! If you’ve ever had Hawaiian pork cooked in an Emu, this is BETTER!!!! ALOHA!!!!! It’s sweet, and soooooo tender it melts in your mouth. My taco was on a fresh tortilla ( made there right in front of you, TALK ABOUT FRESH!) with fresh cilantro, lettuce, and a lime…(you can choose from other veggies to add, but I say less is more….don’t smother the PORK BARBACOA taste). Next was the rice…hot ( temperature is just right, I hate it when rice is cold, not the case here) plus they put some nice mild spices and onions in the rice best rice in town!!! Umm, umm good…..You can choose black or pinto beans…again they are almost perfectly cooked and the temp is just right. The staff is part of the fun…they have energetic, friendly, and personable employees…that seem to be excited to be there, they shout and yell the orders back and forth and they are havin’ fun….a surprise in this type of restaurant.

The atmosphere is upbeat, bright lights, and the tables and chairs were colorful albeit a little crowded, they have their own CAFÉ RIO station playing in the restaurant and the sounds are cool…..a great place to take the family…..the three of us adults ate like kings and the bill was $23.00….super cheap!

As they say at Café Rio “HOLY GUACAMOLE!”

Recipes from the
NBII Garden Party


Tarragon Chicken Salad
Lani Wakeham
5 cooked boneless skinless chicken breasts, diced
2 apples, chopped (Gala or Braeburn recommended)
½ cup green onions, chopped
1 cup chopped celery
1 cup mayonnaise
1 cup sour cream (adjust mayo and sour cream for preferred moistness)
2 tablespoons dried tarragon (I used fresh but not as handy)
Salt, garlic salt and pepper to taste
8 croissants
Chop cooked chicken into pieces (rotisserie chicken works great too). Combine shredded or diced chicken, chopped apple, celery and green onions. In a separate bowl, combine
mayo with sour cream and seasonings. Mix well then add to chicken mixture
and fold in. Chill until ready to serve on croissants as sandwiches. Serves 8.

Jackie's Broccoli Dried Cranberry Salad

1 bunch fresh broccoli, chopped or large bag of flowerets
1/2 c. Red onion, chopped
1/2 lb. Bacon fried crisp and chopped
1/2 c. Hulled sunflower seeds
1/2 c. Dried cranberries
DRESSING:
1 c. Mayonnaise, may also replace up to ½ the mayo with sour cream to cut down calories.
1/4 c. Brown sugar
4 tbsp. Red wine vinegar
Combine salad ingredients in large bowl. Combine dressing ingredients and pour over
salad and toss. Chill. (12 servings.)

Add two cups cooked pasta and a cup of cooked cubed chicken and
double the dressing. It magically becomes Lani's famous "Woman's
Conference and Garden Party Salad"



Easy Lemon Pound Cake
Lani Wakeham
1 box lemon cake mix (Duncan Hines) or any brand of lemon cake mix 1 box lemon cake mix (Duncan Hines) or any brand of lemon cake mix
4 eggs
3/4 cup oil
1/2 water
1 pkg (3 3/4 oz) instant lemon pudding
Beat eggs until thick, add all other ingredients gradually, one at a time Beat 5 minutes at medium speed. Bake in a Bundt pan 50 mins
Glaze
2 cups sifted powdered sugar
1/3 cup lemon juice
Mix until dissolved. Pour it over the cake gradually.

Watermelon Salad (deconstructed style)

Sliced watermelon
Drizzled with Balsamic Vinaigrette (you can make your own, I used bottled. My fav is Ken’s)
Sprinkled with fresh mint (sliced or chopped) and Feta crumbled cheese, to taste.

You can make it a regular salad cubing the watermelon and mixing everything together.

Wraps

Any flavor flour tortilla preferably red or green colored ones.
spread with softened cream cheese.

Spread apricot jam on top of cream cheese (not to much or it will ooze out)

Lay arugula leaves on top of above kind of helter skelter

Sprinkle with shredded Parmesan cheese

Roll up and wrap with saran wrap refrigerate

When ready to serve unwrap and cut into bit size rolls.

Order colored bread (from French’s Bakery) we used pink and yellow

Have bakery slice bread lengthwise.

Remove crust. Spread thin layer of fine chopped egg salad. May be used with other spreads; like
Kraft Pimento Cheese, etc.

Roll-up, lengthwise

Wrap in saran wrap and freeze. Freezing will make it easy to slice.

While frozen slice, creating a pinwheel pattern.

Refrigerate until ready to serve.

1/2 Cup Butter
1 Cup Sugar
Cream sugar and butter together well
ADD:
1 Large egg
Beat the egg and the sugar mixture until pale yellow
ADD:
2 Cups flour
2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon Vanilla

Mix together. Put dough in refrigerator and let it chill, if you don't have time
add a little more flour as you roll it out so it doesn't stick.
Roll out, cut into shapes, place on greased cookie sheet. Bake at 375 for 8
minutes.

Frosting
Whites of two large eggs 9may use powdered egg whites)- beat until stiff, but not dry (soft Peaks)
4 Cups sifted powdered sugar( measure after sifted)
1 tablespoon vanilla or juice of 1 lemon. Optional: 3 drops glycerin for shine

1 quart salted water
1/2 cup plus 2 tablespoons freshly squeezed lime juice
1 generous pound unpeeled small shrimp (about 41 to 50 count to a pound)
1/2 medium white onion, chopped into 1/4-inch pieces
1/3 cup chopped fresh cilantro
1/2 cup ketchup
1 to 2 tablespoons vinegary Mexican bottled hot sauce
About 2 tablespoons olive oil, preferably extra-virgin (optional, but smoothes out sharpness)
1 cup peeled, diced cucumber or jicama (or 1/2 cup each)
1 small ripe avocado, peeled, pitted and cubed
Salt
Several lime slices, for garnish
Tortilla chips or saltine crackers, for serving
Cooking and marinating the shrimp: Bring 1 quart salted water to a boil and add 2 tablespoons of the lime juice. Add shrimp, cover and return to a boil. Immediately remove from heat, set pot lid askew and pour off all liquid. Replace lid and set aside, letting shrimp steam in closed pot for 10 minutes. Spread out shrimp in large glass or stainless steel bowl to cool completely. Peel shrimp (and devein, if desired). Toss shrimp with remaining 1/2 cup lime juice, and other ingredients cover and refrigerate for about 1 hour.

Slow Cooker Swiss Steak
1/4 cup all-purpose flour
salt and pepper to taste
1 1/2 pounds round steak, cut into small pieces
3 tablespoons vegetable oil
3 stalks celery, chopped
1 onion, chopped
3 carrots, shredded
2 (14.5 ounce) cans diced tomatoes with juice
1 tablespoon Worcestershire sauce
2 tablespoons brown sugar, or to taste
In a shallow bowl, mix the flour, salt, and pepper. Lightly coat the round steak pieces in the flour mixture.
Heat the oil in a skillet over medium heat, and saute the celery, onion, and carrots about 5 minutes, until tender. Remove from heat, and set aside. Mix in the round steak pieces, and cook until lightly browned.
Place the vegetables and steak in a slow cooker. Mix in the tomatoes with juice, Worcestershire sauce, and brown sugar.
Cover, and cook 8 to 10 hours on Low, until the round steak is very tender

Sweet and Sour Pork
1 pound of pork sirloin, chop, or country-style rib - trim off fat, and cut into one inch pieces. Okay to substitute chicken.
2 whole bell peppers - any color, I used green and orange. Chopped
1 small can of pineapple - if rings, then cut into cubes. Reserve juice for sauce.
2-3 cups of oil for deep-frying.
Sweet & Sour Sauce
1/2 cup of pineapple juice - if it is a syrup then leave out sugar. Add some water if you do not have enough juice.
1/4 cup of vinegar - white, rice or apple cider vinegar.
1 tablespoon of sugar - for sweetened pineapple syrup, leave out sugar.
2 tablespoons of ketchup
2 tablespoons soy sauce
1 tablespoon of cornstarch or flour - stir and dissolve into pineapple juice and/or water.
Batter for Pork (or chicken)
3/4 cup total of cornstarch and flour, mixed together - you can use flour only.
1/3 cup of water
1 egg - optional
Salt and pepper to taste.

Turning Leftovers into Dinner

Leftovers - we all have them at least from time to time. What do you do with them? Do you have them for lunch, or do they just sit in the fridge for a few days and then you end up throwing them out? You can start saving some time and money by learning how to use those leftovers in new ways to surprise your family at dinner time.

Some people like leftovers and some do not. Still then, many will eat them one day out, but quickly get tired of eating the same thing over and over. Here’s a way to fix the problem if you or someone in your family is the same way. Let’s start with an example. You prepare a roasted pork loin and rice for dinner one night. The family wants something else for dinner the following night so the pork loin gets pushed to the back of the refrigerator. Normally, that’s where it will stay until you clean out the fridge, right? Not anymore. Let’s do something to keep that pork loin from going to waste.

Eating leftovers the way they were originally served, is probably what’s turning family members off from wanting it again the next night. Your family doesn’t have to eat the pork loin as is. So, chop that pork loin up into bite size pieces.

Now you’re probably thinking, ok that’s great, but what do I do with it now? In a large skillet or wok, stir fry the leftover rice with a bag of frozen veggies, an egg, and some of the chopped pork loin to make pork fried rice. Add a little soy sauce and you’ve got a whole new dinner for your hungry family.

This is just one way that leftovers can be turned into a new dish with a new flavor. The same can also be done using chicken, seafood, or beef. Let’s take a look at beef.

If you have hamburgers left from dinner, chop them up until they resemble ground beef again. The meat can be combined with chili powder and taco sauce to make beef tacos. Or, add some beans, chopped peppers and tomatoes, and sauce to create a pot of chili. If you have the imagination, there are an unlimited number of possibilities of what you can do with meats and side dishes from a previous night’s dinner.

Using a little leftover magic can make one meal last for two, three, or even four more days. But, you don’t have to eat it all in the same week. Fix a new meal with the leftovers and freeze it until you are ready to have that particular meat again. On that day, dinner will already be made, all you’ll need to do is heat it up. Yes, it really can be just that simple.

Your family will be amazed at your ability to transform any meal into a new creation they will enjoy. Besides that, you will save money on your grocery bill and won’t be throwing it away in the trash can as spoiled leftovers. Try these and similar ideas to expand your family’s palate.
