Easy Grilled Tri Tip
1/4 cup soy sauce
1/4 cup olive oil
2 tablespoons water
2 cloves garlic, peeled and chopped
ground black pepper to taste
4 pounds beef tri tip, cut into 1/2 inch slices
In a large, non-reactive bowl, blend the soy sauce, olive oil, water, garlic, and pepper. Place the beef tri tip in the marinade. Cover, and marinate in the refrigerator at least 4 hours.
Preheat an outdoor grill for high heat, and lightly oil grate.
Grill the beef slices 3 to 5 minutes per side, or to desired doneness. Discard remaining marinade.

3 Tbsp. chopped parsley
Season beef steaks on both sides with the salt and pepper. In a shallow dish, beat egg and water until blended. In a second shallow dish combine bread crumbs, salt, pepper, and parmesan cheese. Dip each steak into egg mixture then into coating mixture to coat both sides.
In a 12-inch nonstick skillet, heat 1 Tbsp. oil over medium to medium-high heat until hot. Add the steak and cook 5-6 minutes, turning once. Remove to a platter and keep warm. Repeat Sprinkle with chopped tomato and parsley

1 (10.75 ounce) can Campbell's® Condensed Cheddar Cheese Soup
1/2 cup milk
2 cups penne pasta, cooked and drained
Heat the oil in a 10-inch skillet over medium-high heat. Add the sausage and cook until well browned, stirring occasionally. Remove the sausage from the skillet. Pour off any fat.
Add the pepper and onion to the skillet and cook until the vegetables are tender, stirring occasionally. Add the garlic and cook and stir for 1 minute. Stir in the soup and milk and heat to a boil. Return the sausage to the skillet. Reduce the heat to low. Cook until the sausage is cooked through, stirring occasionally.
Place the pasta into a large bowl. Add the sausage mixture and toss to coat.

1 large head cauliflower, separated into florets
1/3 cup grated Parmesan cheese
salt and black pepper to taste
1 tablespoon chopped fresh parsley
Preheat the oven to 450 degrees F (220 degrees C). Grease a large casserole dish.
Place the olive oil and garlic in a large resealable bag. Add cauliflower, and shake to mix. Pour into the prepared casserole dish, and season with salt and pepper to taste.
Bake for 25 minutes, stirring halfway through. Top with Parmesan cheese and parsley, and broil for 3 to 5 minutes, until golden brown

About 20 minutes before the ham is done, spoon about half of the glaze over top of ham, then about 10 minutes before done, spread remaining glaze over ham.

6 pork chops 1/2 inch thick
1 tbsp. vegetable oil and water
1 can (10 1/2 oz.) condensed chicken broth
2 tbsp. honey
1 tsp. garlic salt
1 tsp. grated fresh ginger or 1/4 tsp. ground ginger
1 c. whole white grain rice
1 pkg. (8 oz.) mixed dried fruit, chopped

A Perfect Centerpiece for Your Holiday Menu
1 2-pound pork rack (with 4 bones attached)
3 yellow onions, sliced
2 ounces olive oil
1 inch fresh ginger, crushed
1/2 stick cinnamon
1 star anise
4 tablespoons maple sugar (can substitute with brown sugar)
3 tablespoons sweet butter
3 1/3 cups apple cider
salt & black pepper
Season both sides of rack with salt and pepper 20 minutes before cooking. Sear in a heavy sauté pan with olive oil until the rack is well caramelized. Set aside and preheat oven to 350 degrees.
In same pan, add sliced onions, ginger cinnamon, star anise and butter. Slowly cook until onions are well caramelized. Add maple sugar and cook for 2 minutes.
Deglaze with cider, adjust salt and pepper to taste and reduce until a glaze forms.
Completely cover rack with half of onion compote. Transfer to roasting pan and place in oven. Cook at 20 minutes per pound or until internal temperature is 150 degrees. Halfway thru cooking time, pour over remaining half of onion compote. Remove from oven and let rest for 10 minutes before slicing. Serves 4

Place breast in a shallow roasting pan.
In a medium sauce pan, combine remaining ingredients and gently simmer for 3-5 minutes, allowing the flavor from the sprig on rosemary (I used one that was about 5 inches long) to infuse into the sauce. Drizzle of the mixture on top of the breast. Season with pepper. Place the sprig of rosemary across the top of the breast. Place in an oven preheated to 325 f until the turkey reaches an internal temperature of 160. This At about 45 minutes, baste it with some of the remaining butter/wine/honey mixture. At 1hour and 15 minutes start basting it every 30 minutes with the juices from the pan. Remove at 160 degrees, discard the rosemary, and wrap the breast in foil for at least 15 minutes but will stay warm for much longer.

While roast is standing, increase oven temperature to 475°F. Continue cooking vegetables 10 minutes or until tender and lightly browned. Carve roast across the grain into thin slices. 2 med. sized firm, ripe tomatoes, washed, cored & cut crosswise into 1/4-inch slices

Preheat the oven to 400°F. Pat the red snapper fillets completely dry with paper towel and season them on both sides with the salt and a few "grindings" of pepper. Stir lemon juice mixture until the ingredients are well blended. Then add the fillets and turn them about to moisten them evenly. Arrange the fillets, skin side up. 1 beef tri-tip roast (approximately 2 pounds)
1 teaspoon dried rosemary leaves, crushed
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon ground black pepper

2 medium sweet onions, cut into 1-inch thick wedges
2 large sweet potatoes, peeled and quartered
Combine rosemary, garlic, salt and pepper to form a paste. Spread half of the herb paste evenly over surface of beef tri-tip roast. Add oil to remaining herb paste and mix well. Place vegetables in a large bowl. Pour herb-oil mixture over vegetables and sitr to coat evenly. Roast in preheated 425°F oven for 35 to 40 minutes for rare to medium. While roast is standing, increase oven temperature to 475°F. Continue cooking vegetables 10 minutes or until tender and lightly browned. Carve roast across the grain into thin slices. 1 (2 to 3 pound) whole chicken

Directions
Wad three pieces of aluminum foil into 3 to 4 inch balls, and place them in the bottom of the slow cooker.
Rinse the chicken, inside and out, under cold running water. Pat dry with paper towels. Season the chicken with the salt, pepper and paprika, and place in the slow cooker on top of the crumbled aluminum foil.
Set the slow cooker to High for 1 hour, then turn down to Low for about 8 to 10 hours, or until the chicken is no longer pink and the juices run clear.

1 (2 to 3 pound) whole chicken
salt and pepper to taste
1 teaspoon paprika
Directions
Wad three pieces of aluminum foil into 3 to 4 inch balls, and place them in the bottom of the slow cooker.
Rinse the chicken, inside and out, under cold running water. Pat dry with paper towels. Season the chicken with the salt, pepper and paprika, and place in the slow cooker on top of the crumbled aluminum foil.
Set the slow cooker to High for 1 hour, then turn down to Low for about 8 to 10 hours, or until the chicken is no longer pink and the juices run clear.

1 (2 to 3 pound) butternut squash, peeled and seeded
2 tablespoons unsalted butter
1 medium onion, chopped
6 cups chicken stock
Nutmeg
Salt and freshly ground black pepper
Cut squash into 1-inch chunks. In large pot melt butter. Add onion and cook until translucent, about 8 minutes. Add squash and stock. Bring to a simmer and cook until squash is tender, about 15 to 20 minutes. Remove squash chunks with slotted spoon and place in a blender and puree. Return blended squash to pot. EASY APPLE CRISP
1 c. sugar
2 tsp. lemon juice
1/4 c. water
1/2 tsp. cinnamon
6 peeled and sliced large apples
3/4 c. flour
1/4 tsp. salt

Combine 1/2 c. sugar, lemon juice, water and cinnamon in bottom of small baking pan. Slice in apples. Blend remaining 1/2 c. sugar, flour, salt and butter until crumbly. Spread over apples and pat smooth.

Preheat oven to 350 degrees F (175 degrees C).
Crush garlic with rosemary, salt and pepper, making a paste. Pierce meat with a sharp knife in several places and press the garlic paste into the openings. Rub the meat with the remaining garlic mixture and olive oil.

Easy Turkey Chili
1 1/2 teaspoons olive oil
1 pound ground turkey
1 onion, chopped
2 cups water
1 (28 ounce) can canned crushed tomatoes
1 (16 ounce) can canned kidney beans - drained, rinsed, and mashed
1 tablespoon garlic, minced
2 tablespoons chili powder
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon ground cayenne pepper
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender. Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.

Bring a large pot of salted water to a boil. Stir in pasta and return pot to boil. Cook until al dente. Drain well. Melt butter in a large saucepan over medium heat. Stir in garlic and shrimp. Cook, stirring constantly, for 3 to 5 minutes.. Mix shrimp with drained pasta in a serving bowl. Sprinkle with cheese and parsley. Serve immediately.

2 tablespoons vegetable oil
1 pound skinless, boneless chicken breasts, cut into strips
1 (1.27 ounce) packet fajita seasoning
1 red bell pepper, cut into thin strips
1 green bell pepper, cut into thin strips
1 poblano pepper, cut into thin strips
1 large onion, cut into thin strips
1 (14.5 ounce) can fire roasted diced tomatoes
1 (15 ounce) can seasoned black beans
1 (14 ounce) can chicken broth
1 dash hot sauce
salt and pepper to taste
Heat oil in a large soup pot over medium heat. Place chicken in the hot oil; cook, stirring only occasionally, until brown, about 10 minutes. Sprinkle fajita seasoning over the browned chicken and stir well to coat. Add the red and green bell pepper, poblano pepper, and onion to the seasoned chicken. Stir and cook over medium heat until the vegetables are soft, about 10 minutes. Pour the fire roasted tomatoes, black beans, and chicken broth into the pot with the chicken and vegetables. Bring the soup to a boil over high heat, then reduce the heat to medium-low, and simmer uncovered for 30 minutes, stirring occasionally.
Season the soup with hot sauce, salt, and pepper to taste before serving

Place the potatoes in a microwave oven, and cook on high power for about 5 minutes. Slice each potato in half the long way and cook potatoes another 2 minutes on high power. 2 large rotisserie Chickens
2 (15 1/16 ounce) jars green tomatillo sauce
1 bag corn husk
Soak the corn husks in warm water until soft.
Shred the chicken and marinate in the green salsa or tomatillo sauce.
Spread masa evenly over corn husks, and spread a spoonful of marinated chicken on top of the masa.
Fold the sides of the corn husk to center over the masa so that they overlap to make a long package.
Fold the empty part of the husk under so that it rests against the side of the tamale with a seam.
Place the tamales in a steamer and cook tamales for 35-40 minutes. Check every 20 minutes.

Preheat oven to 350 degrees F (175 degrees C).
Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top. Bake in preheated oven for 35 minutes, or until golden brown.

2 large russet potatoes, scrubbed
2 tablespoons olive oil
salt and ground black pepper to taste
Place the potatoes in a microwave oven, and cook on high power for about 5 minutes. Slice each potato in half the long way and cook potatoes another 2 minutes on high power. Preheat a grill for medium heat. Brush the potato tops with olive oil, and season with salt and pepper to taste. Cook on prepared grill for 15 to 20 minutes, turning once.

2 large rotisserie Chickens
2 (15 1/16 ounce) jars green tomatillo sauce
1 bag corn husk
Soak the corn husks in warm water until soft.
Shred the chicken and marinate in the green salsa or tomatillo sauce.
Spread masa evenly over corn husks, and spread a spoonful of marinated chicken on top of the masa.
Fold the sides of the corn husk to center over the masa so that they overlap to make a long package.
Fold the empty part of the husk under so that it rests against the side of the tamale with a seam.
Place the tamales in a steamer and cook tamales for 35-40 minutes. Check every 20 minutes.

Preheat oven to 350 degrees F (175 degrees C).
Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top. Bake in preheated oven for 35 minutes, or until golden brown.

6 chicken tenders
1 cup soy flour
1 tbsp. Cajun seasoning
1 tbsp Lawry's garlic salt (coarse w/ parsley)
3 cups of peanut or vegetable oil
Put all ingredients in a gallon baggie except the chicken . Shake up to mix. Then add the chicken, Shake to coat and use tongs to get chicken out of bag, shaking off excess breading.
Add to hot oil and fry 10-15 minutes. Use ranch, Texas Pete, or mix mayo and mustard together for dipping to keep it low carb.

HONEY GRILLED PORK CHOPS
8-10 pork chops
2 cups honey (use more if needed)
soy sauce
Pour honey into a bowl. Add soy sauce, stirring until sauce is a syrupy consistency. Place chops in a bowl or cake pan and cover with 1/2 of the sauce. (Place balance of sauce in a sauce pan.) Let the chops marinate in refrigerator for as long as you wish. Simmer the sauce in the saucepan over low heat until thickened. Place chops on grill, brushing fresh marinade onto chops as needed (use the marinade which was stored in the jar but pour it out into a bowl before brushing so as not to contaminate the remaining gravy.) Cook until juices no longer run pink when pierced by a fork.

4 carrots
2 celery stalks
1 onion
6 chicken thighs
1 envelope Good Seasons Italian dressing mix
Wash and clean chicken thighs, arrange in 9x13 baking dish. Wash and dice up potatoes, carrots, celery and onion. Mix and arrange all around chicken thighs. Mix Good Season's Italian dressing with water, shake thoroughly, and pour over chicken and vegetables. Add more water so that vegetables are somewhat covered. Bake at 350 degrees for 1 hour or chicken looks golden brown. (And just because it has Easy and Bake in the name you have to use your regular oven;) Recipe can be altered for more people. Feeds approximately 3 people.
